Categories     One Dish Meal

Time 35m

Yield 4 serving(s)

Number Of Ingredients 6

4 large potatoes
1 (12 ounce) package smoked sausage
1/2 cup chopped onion
2 garlic cloves
2 tablespoons oil
salt and pepper

Steps:

  • Put a large skillet on the stove on Med High. Put oil in the pan and add the chopped onions and garlic. Peel and cube the potatoes. The smaller the cube the less cooking time. Add salt and pepper to season accordingly to your taste. Turn the potatoes every few minutes till they are browned on all sides. Slice the smoked sausage (I use the skinless with cheese inside) and add to the pan. Cover then stir every few minutes. We like the meat really browned so I turn up the heat to high till the sausage slices are the right color.
  • Serve with a salad and some sweet tea, and you have the perfect midweek meal.

ROASTED SWEET POTATOES WITH SMOKED PAPRIKA

Roasted Sweet Potatoes With Smoked Paprika image

This is a simple way to put an enormous amount of flavor on a plate, and it is particularly delicious with roast chicken - or as a side dish for slab-bacon tacos with burned scallion crema. (Drizzle a little of the crema onto the potatoes just before serving, as if to recall the aioli served with patatas bravas in Spain.) As always when using paprika, smoked or plain, if you can't recall the last time you did so, it is time for a new jar. All spices go stale. Paprika does so quickly.

Provided by Sam Sifton

Categories     vegetables, side dish

Time 50m

Yield 6 to 8 servings

Number Of Ingredients 7

4 large sweet potatoes, peeled and cut into cubes
1 large Spanish onion, peeled and cut into cubes

  • Heat oven to 425 degrees. Combine the sweet potatoes, onion and garlic in a large bowl, and drizzle the olive oil over it, then toss to coat. Sprinkle the salt, pepper and smoked paprika over the potatoes, and toss again to coat. Tip the potatoes onto a sheet pan or into a shallow casserole, then cover it with foil.
  • Roast the potatoes in the oven, tossing occasionally, until they are soft at the center and beginning to crisp at the edges, approximately 30 to 40 minutes. Serve hot, drizzled with burned-scallion crema if you like.

LEMON ROASTED POTATOES WITH SMOKED PAPRIKA AND ROSEMARY

Lemon Roasted Potatoes With Smoked Paprika and Rosemary image

A potato doesn't need much else other than oil, salt and a hot oven to be truly delicious. But dust them with smokey paprika, and roast them alongside tangy lemon slices on a bed of woodsy rosemary, and you have some truly special potatoes. A large and waxy potato is best here (Yukon Golds especially), but know that a starchy potato like an Idaho would also work; just expect something fluffier with less crispiness.

Provided by Alison Roman

Categories     vegetables, side dish

Time 50m

Yield 4 servings

Number Of Ingredients 8

2 lemons
2 pounds large Yukon Gold potatoes (about 3), scrubbed and cut lengthwise into eighths
1/4 cup olive oil
1 teaspoon smoked paprika
Kosher salt
Freshly ground pepper
4 sprigs rosemary or thyme
1/4 cup parsley, coarsely chopped

Steps:

  • Heat oven to 425 degrees. Cut one lemon into quarters and set aside. Slice remaining lemon about 1/4-inch thick and remove all seeds.
  • Place sliced lemon on a rimmed sheet tray along with potatoes, olive oil and paprika, and mix together with clean hands. Arrange in a single layer and season with salt and pepper. Scatter rosemary in and around potatoes.
  • Place in oven and roast, rotating sheet tray once and flipping potatoes as needed, until potatoes are golden brown, crisped and completely tender, 35 to 40 minutes.
  • Remove from oven and transfer everything to a large serving platter. Top with parsley and serve with lemon quarters for squeezing alongside.

SCALLOPED POTATOES WITH SMOKED SAUSAGE

Scalloped Potatoes with Smoked Sausage image

No cheese? No problem! These easy potatoes have all the creaminess you've come to expect from scalloped potatoes without using a bit of cheese. (Oh, and the addition of smoked sausage is de-lish!)

Provided by Amy Alusa

Categories     Potatoes

Time 1h30m

Number Of Ingredients 6

5 lb russet potatoes, washed, peeled and sliced thinly
1 1/2 ropes of eckrich smoked sausage --other brands still taste good, but not as good!
1/2-3/4 c pure butter (margarine will work, but not as good) if you do not have a full 1 1/2 links of sausage, you could use the larger amount of butter.
3/4 c all purpose flour
1 can(s) evaporated milk
salt and pepper (desired quantity)

Steps:

  • 1. Preheat oven to 350F. Spray an 8 x 13 inch casserole with vegetable spray. (I use the butter flavored.)
  • 2. Place a layer of sliced potatoes to cover the bottom of the casserole. Then dot with about 1/2 of the smoked sausage and 1/3 of the butter.* Sprinkle lightly but generously with flour, and salt and pepper. Add another layer, just like the first, and continue until potatoes and sausage are used up (ususally 2 layers). Finish up with the sprinkling of flour and salt & pepper.*
  • 3. Pour evaporated milk over to cover, moistening all of the flour on top. Add enough water or additional milk to ensure all of the potatoes are damp and most of them covered (not necessarily all, but most).
  • 4. *If you don't care about too much fat, you can add dots of sour cream and sprinkle with grated cheese of your choice as well. Oooo La La!
  • 5. Bake uncovered for at least an hour. Top should be browned and all bubbly. Test potato to see if it is tender. If it is too hard or stiff still, bake a little longer until potato tests done. Try one especially underneath in the milk. Especially good with steamed brocolli florets. I steam them, stir in a tiny bit of butter, and lemon juice.

SAVORY SMOKED SAUSAGE AND POTATOES

Savory Smoked Sausage and Potatoes image

My family loves this dish ! It makes its own sauce as it cooks . We love it just the way it is but you could always add in some broccoli or peas if you like . This is also very good started on the stove and then finished on the grill (or smoker) instead of the oven !

Provided by Millie Johnson

Categories     Other Main Dishes

Time 1h

Number Of Ingredients 12

2 pkg smoked beef sausage
6 medium potatoes, cubed
1 small fine diced onion
1 carrot, fine diced
3 c chicken stock, reduced sodium
1/4 tsp garlic powder
1/4 tsp black pepper
3/4 tsp salt
1/4 tsp celery seed
2 Tbsp parsley flakes
1 Tbsp olive oil
1/3 c flour

Steps:

  • 1. Preheat oven to 350 degrees (f). * or grill
  • 2. Fine dice the onion and carrot and set aside. You may use a food processor for this if you want to.
  • 3. Cut sausage about 1/2 in. - 3/4 inch slices . Set aside.
  • 4. Cut potatoes into 1- 1 1/2 inch cubes. Set aside. (sometimes I will cut the potatoes while I'm browning the sausage)
  • 5. Heat large pot. Add olive oil then brown sausage. Remove from pot with a slotted spoon and set aside. You want to leave as much oil as possible in the pot.
  • 6. Add the diced carrot and onion to the pot and cook for just a minute.
  • 7. Now add back the sausage and add potatoes, along with the garlic powder, celery seed, parsley and salt and pepper. Give it a good mix then add the flour and stir to coat everything.
  • 8. Add chicken stock and stir well remembering to scrape the bottom to loosen the yummy bits. Spray a 9x13 in. baking dish . Pour mixture into the pan, cover with foil and bake for 40 minutes to an hour or till potatoes are tender. Let sit for 5 minutes so the liquid will thicken before serving.
  • 9. * You can skip the oven all together and put it on the grill or smoker. Keep it over indirect heat. Check it and give it a stir every so often.... Very good !

TWICE-SMOKED POTATOES

Twice-Smoked Potatoes image

Twice "baked" potatoes except on the smoker instead of in the oven. This is a great side for ribs, brisket, or whatever else you've got the smoker fired up for. Once the potatoes are cut open, they take on the smoke flavor quickly so you won't want to leave them in there for more than 30 minutes. I used hickory for these but any wood will work.

Provided by Soup Loving Nicole

Categories     BBQ & Grilling     Smoked

Time 3h40m

Yield 1

Number Of Ingredients 7

1 large russet potato
1 teaspoon olive oil
3 tablespoons milk
2 tablespoons shredded Cheddar cheese
1 tablespoon salted butter, melted
½ teaspoon chopped fresh chives
salt and ground black pepper to taste

Steps:

  • Preheat a smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's instructions.
  • Using a fork, pierce holes on all sides of the potato. Brush oil over entire potato.
  • Place the potato directly on the smoker rack and cook for 3 hours. Transfer potato to a cutting board and let cool until easily handled.

Tips:

  • Choose the right potatoes: For the best results, use firm, waxy potatoes like Yukon Gold or Red Bliss. These potatoes will hold their shape well and won't become mushy when smoked.
  • Soak your potatoes: Soaking the potatoes in cold water for 30 minutes before smoking will help them cook more evenly. This step is especially important for larger potatoes.
  • Rub your potatoes with oil: Before you smoke your potatoes, rub them with a little olive oil. This will help them crisp up and give them a nice smoky flavor.
  • Season your potatoes: You can season your potatoes with any herbs or spices you like. Some popular options include garlic powder, onion powder, paprika, and chili powder.
  • Smoke your potatoes at a low temperature: The ideal temperature for smoking potatoes is between 225 and 250 degrees Fahrenheit. This will allow them to cook slowly and evenly without burning.
  • Check your potatoes regularly: Use a fork to check the potatoes for doneness. They are done when they are tender all the way through.

Conclusion:

Smoking potatoes is a great way to add flavor and complexity to this classic side dish. With just a few simple steps, you can create delicious smoked potatoes that will be the star of your next meal. So next time you're looking for a new way to cook potatoes, give smoking a try!
