4 (3/4 inch) thick pork chops
2 cloves garlic, minced
1 onion, thinly sliced

1 teaspoon caraway seed

1 large red apple, diced
1 onion, chopped

This is not a recipe for a true sauerkraut lovers as it is very mild re the sauerkraut. Hey you non "Kraut" lovers you may love it! Instead of tomato juice you may substitute wine, chicken stock or apple juice, This recipe would cook nicely in a crock pot too I think. I would layer it the same and cook on low for 6 hours. 1 1/2 cups sauerkraut, well squeezed
2 medium raw potatoes, sliced 1/4 inch
1 cup raw carrot, sliced 1/4 inch

2 smoked pork chops
1 1/2 cups mashed potatoes
1 1/2 cups sauerkraut, well drained
3 tablespoons sweet Russian mustard (any sweet dark mustard will do)
salt & pepper
1 tablespoon butter

  • Mix the potatoes and the kraut.
  • Place half the sauerkraut/potato mixture in a Pyrex pie plate.
  • Spread 1 1/2 tbsp of mustard over the sauerkraut.
