1 can smoked oysters
Snipped parsley to taste

  • On a separate plate sprinkle the parsley. Place finished roll on the parsley and roll to coat with the parsley. Return roll to aluminum foil. Cover the roll tightly.
  • Refrigerate for at least 30 minutes. You can even leave overnight. Serve on a platter with crackers or mini toasts surrounding the roll.

1/2 teaspoon onion salt
1 can smoked oysters, drained
1/4 cup chopped fresh parsley
1/4 cup chopped walnuts

Steps:

  • (Lowfat products can be used with no effect on taste.) Mix in worcestershire sauce, garlic and onion salt.
  • Spread on oiled waxed paper in a rectangular shape, 1/2-inch thick.

  • Roll as a jelly roll and chill for at least six hours until ready to serve.
  • Coat outside of roll with parsley and nuts.

Tips:

  • Choose fresh oysters. Smoked oysters can be found in most grocery stores, but it's important to choose fresh oysters that have been properly smoked. Look for oysters that are plump and have a briny smell.
  • Use a good quality bread. The bread you use for your smoked oyster roll is important. Choose a bread that is sturdy enough to hold the oysters and sauce, but not so dense that it overpowers the flavor of the oysters.
  • Don't overcook the oysters. Smoked oysters are already cooked, so you don't need to cook them again. Simply heat them through until they are warm.
  • Use a flavorful sauce. The sauce you use for your smoked oyster roll is also important. Choose a sauce that is flavorful and complements the taste of the oysters. Some popular options include tartar sauce, cocktail sauce, and remoulade.
  • Add some toppings. To add some extra flavor and texture to your smoked oyster roll, try adding some toppings. Some popular options include chopped celery, onion, and pickles.
