1 cup coarse fresh bread crumbs, from about 3 slices white sandwich bread, crusts removed
¼ cup finely grated Gruyère
1¼ cups heavy cream, at room temperature

Steps:

  • Heat the oven to 425°F. Put the Brussels sprouts in a 9x13-inch ceramic or metal baking dish, and toss with 2 tablespoons of the melted butter, ¾ teaspoon salt, and ¼ teaspoon pepper. Spread the sprouts evenly in the dish and roast, tossing once halfway through, until tender and browned in spots, 25-30 minutes.
  • While the sprouts roast, place the bread crumbs in a medium bowl. Pour the remaining tablespoon of melted butter over the crumbs and sprinkle with ⅛ teaspoon salt. Mix in the Gruyère. Set aside.

1 large shallot, finely chopped

1 cup heavy cream (or half and half or a combination)

  • Preheat oven to 375°F Lightly grease/spray a casserole dish.

1 head cauliflower, trimmed, cored and broken into medium florets (1 1/2 pounds)
10 Brussels sprouts, trimmed and quartered (8 ounces)
1/4 cup olive oil
Kosher salt and freshly ground black pepper
2 cups grated sharp Cheddar (6 ounces)
2 cups grated smoked gouda (6 ounces)
1 cup grated mozzarella (4 ounces)
1 teaspoon smoked paprika

  • Preheat the oven to 425 degrees F. Line a baking sheet with parchment and set aside.

1 1/2 cups milk
1 cup broth

Steps:

  • 1) Heat a large skillet and crisp-cook the bacon. Transfer it to a plate and set it aside. Pour off all but 2 tablespoons of bacon fat from the pan. Add the onion to the pan and saute over medium heat for 6 to 7 minutes; add the garlic for the last minute. Scrape the onions and garlic into a large, shallow casserole and spread them around evenly. Add the remaining liquid and cook for about 5 minutes, whisking frequently. 5) Whisk in the Parmesan cheese, mustard, salt, thyme, (try liquid smoke) and pepper. Pour the sauce evenly over the Brussels sprouts. Sprinkle bacon bits over the sauce. Sprinkle evenly with the Cheddar cheese and dust lightly with paprika, if desired. 6) Place the casserole on the center oven rack and bake for 25minutes.
