1 pound chicken, cut into bite-sized pieces
½ teaspoon kosher salt
freshly ground black pepper to taste
4 tablespoons extra-virgin olive oil
14 ounces smoked sausage, sliced on the diagonal
4 cloves garlic, minced
2 cups low-sodium chicken broth
1 ¼ cups heavy cream
2 cups dried penne pasta
1 ½ tablespoons Cajun seasoning, plus more to taste
½ cup freshly shredded Parmesan cheese
1 tablespoon minced Italian flat-leaf parsley

Steps:

6 tablespoons butter, cubed
1/2 cup milk
1/2 teaspoon garlic powder
Salt and pepper to taste
2 boneless skinless chicken breast halves, cooked and cubed (about 1-1/2 cups)
2 cups frozen chopped broccoli, thawed
2 small zucchini, julienned
1/2 cup julienned sweet red pepper
6 ounces cooked fettuccine
