BACON WRAPPED DATES WITH ALMONDS
Don't let anyone tell you otherwise...THESE ARE WONDERFUL. They are always the very first thing to go at a party. When I catered I always told my customers to order 2-3 times more of these than anything else. Most people expect scallops but are pleasantly surprised by the sweet wonderful flavor inside. A combination of sweet, crunchy, salty and smoky is a real winner! You won't be sorry you went out on a limb to try these. You can prep ahead of time, freeze and then pull them out of the freezer and bake right before the party.

Steps:
- In a mixing bowl, add the ground almonds, powdered sugar, and orange flower water. Add 1 Tbsp water and work into a paste. The dough should be slightly moist; add a few more drops of water (or orange flower water) if needed.
- If using food coloring, divide the paste into even parts, add 5 or 6 drops of a single color to each, and work in.
- Wipe the dates with a damp cloth. Cut a lengthwise incision across the top of each date and carefully remove the pit. Take 1 tsp or so of the almond paste, roll it between your palms into a spherical shape, and tuck inside the date. It should bulge out of the opening. Repeat with the remaining paste and dates. Garnish each date with a walnut pressed slightly edgewise into the almond paste before serving.
SMOKED ALMOND STUFFED DATES
Steps:
- Cut a slit into each date. Set the nuts into the dates with the nuts resting lengthwise on the dates. The shapes of the almond and date are similar. Don't wedge the nut too deep. It should rest half-in and half-out of the date. Arrange filled fruit on a small serving plate.
Tips:
- Choose fresh, plump dates for the best flavor and texture.
- Use a sharp knife to make a clean slit in the dates, being careful not to cut all the way through.
- Pit the dates using a spoon or your fingers, being careful not to damage the date.
- Stuff the dates with the almond mixture, using a spoon or your fingers to pack it in tightly.
- Smoke the dates in a smoker or on a grill over indirect heat until they are slightly caramelized and the almond mixture is set, about 30 minutes.
- Serve the dates warm or at room temperature, drizzled with honey or agave syrup, if desired.
Conclusion:
Smoked almond stuffed dates are a delicious and elegant appetizer or snack that is perfect for any occasion. They are easy to make and can be prepared ahead of time, making them a great option for parties or potlucks. The combination of sweet dates, smoky almonds, and creamy goat cheese is sure to please everyone. So next time you are looking for a unique and flavorful appetizer, give smoked almond stuffed dates a try!
