This is a super simple recipe that I make as a sweet, easy side dish. It tastes a LOT like apple pie... but even healthier!

2 large sweet potatoes, peeled and diced
2 tablespoons butter
¼ cup white sugar
1 teaspoon ground cinnamon
½ teaspoon ground allspice
1 Granny Smith apple - peeled, cored and sliced
⅛ cup milk

Steps:

  • Place the sweet potato in a medium saucepan and fill with enough water to cover the potatoes. Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until tender. Remove from heat, drain and set aside.
  • Melt butter over low heat in a small saucepan. Mix in the sugar, cinnamon and allspice. Add the apple slices, cover, and let simmer for 5 minutes, or until the apples are tender. Mix the apple mixture into the drained sweet potatoes along with the milk. Mix well using an electric mixer or just a fork until potatoes are mashed.

3 pounds sweet potatoes, peeled and cubed (about 8 cups)
1-1/2 pounds tart apples, peeled and cubed (about 4 cups)
1-1/2 cups unsweetened apple juice
1 bottle (12 ounces) light beer or additional unsweetened apple juice
1 cup packed brown sugar
1 cup sour cream
2 tablespoons butter
Minced chives, optional

Steps:

  • Place potatoes and apples in a 6-qt. slow cooker. Add apple juice and beer. Cook, covered, on low 5-6 hours or until potatoes are tender., Drain; return to slow cooker. Add brown sugar, sour cream and butter. Mash potato mixture to reach desired consistency. If desired, top with minced chives.

8 lbs sweet potatoes (about 12 large)
1 cup freshly squeezed orange juice
1 cup heavy cream
8 tablespoons butter, melted
1/2 cup light brown sugar
2 teaspoons ground nutmeg
1 teaspoon cinnamon
4 teaspoons salt
2 teaspoons fresh ground pepper
6 tablespoons butter
6 mcintosh apples or 6 macoun apples, peeled,cored,and cut into eighths
6 tablespoons light brown sugar

Steps:

  • Preheat oven to 375°.
  • Scrub potatoes, then prick several times with a knife or fork.
  • Bake 1 hour, or until very soft when pierced with a knife.
  • Combine orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt, and pepper.
  • Remove potatoes from oven.
  • Once cooled, scoop out the insides with a spoon.
  • Place 1/2 of sweet potato meat into the bowl of an electric mixer.
  • Add 1/2 of juice-and-cream mixture, blend until combined but not smooth, and pour into a large baking dish.
  • Repeat with remaining potatoes and juice-and-cream mixture, and add to baking dish.
  • Melt butter in a large skillet over medium-high heat.
  • Add apple wedges and brown sugar; cook about 10 minutes, turning apples occasionally, until lightly browned on both sides.
  • Place on top of sweet potatoes and bake 30 minutes, until heated through.

1/4 cup light brown sugar

2 teaspoons kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Scrub the potatoes, prick them several times with a knife or fork, and bake them for 1 hour or until very soft when pierced with a knife. 1/2 cup coarsely chopped walnuts
Juice of 1/2 lemon
2 large sweet potatoes, peeled and cut into 1-inch dice
Extra-virgin olive oil
Kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon cayenne pepper
3 Honeycrisp or Granny Smith apples

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large bowl, toss the sweet potatoes generously with some olive oil, salt, cinnamon and cayenne. Lay the sweet potatoes out on a sheet tray, place them in the oven and roast until they are very soft and mushy, 30 to 35 minutes.
  • Peel the apples and cut into 1-inch dice. Toss the apples with the lemon juice, some olive oil, salt and the rosemary. Lay them out on a sheet tray and place in the oven during the last 15 minutes of the cooking time for the sweet potatoes.
