1 ½ lb pork rib, 2 racks
1 tablespoon salt
1 tablespoon pepper
1 tablespoon garlic powder
1 tablespoon paprika
1 tablespoon dried oregano
1 bottle BBQ sauce, of preference

Steps:

  • Lay out the ribs on a large baking tray.
  • Season evenly with salt, pepper, garlic powder, paprika, and oregano. Rub in on all sides.
  • Pour half the BBQ sauce over the ribs and brush to evenly coat all sides.
  • Transfer the ribs to a large slow cooker. Position the ribs so they are standing up, with the meatier side down, and so the meat side is against the walls of the slow cooker, with the bone sides facing in.
  • Cover and cook on low for 7 - 8 hours, or high for 4 hours. Check after the allotted time, you want to make sure the meat is cooked through and tender, but you do not want it to be so tender it falls off the bone. If they seem a little tough, allow to cook an additional 30 minutes, as needed.
  • Remove the ribs and transfer to wire rack set over a foil-lined baking sheet.
  • Paint the ribs with additional BBQ sauce, ensuring they are well-coated on both sides.
  • Broil HIGH for 5-8 minutes to caramelize the sauce, making it slightly charred and bubbly.
  • Remove and carefully cut between the bones to separate into individual ribs.

1 rack side pork ribs
2 Tbsp brown sugar
1/2 t garlic powder
1/2 t onion powder
1 tsp thyme, dried
1/2 t mustard powder
1/2 t smoked paprika
as desired, salt and pepper
1c BBQ sauce

Steps:

  • 1.rinse the ribs and pat dry.*optional step* - Remove the silver skin. 2. Cut ribs into 2 - 3 rib portions3. Mix together all the seasonings and sprinkle on top, bottom and sides of the rib portions. 4. Place into a bag or container and marinate 6 - 8 hours, or even overnight. 5. Preheat oven to 250F6. Wrap the rib portions in foil and place in the oven. 7. Roast for 2.5 - 3 hours. 8. Remove from the oven when they've come to temperature and take the ribs out of the foil. 9. Place the ribs on a rack and brush with the bbq sauce. 10 Broil on both sides to produce some crispy char bits on the outside of the ribs. Enjoy!

1 tablespoon paprika
2 teaspoons coriander
1 teaspoon garlic powder
1 teaspoon onion powder

3 tablespoons olive oil
1 onion, finely diced
3 cloves garlic, finely minced
1 cup ketchup
2 teaspoons worcestershire sauce
¼ cup balsamic vinegar
⅓ cup maple syrup
1 teaspoon salt
½ cup water

Steps:

  • Preheat your oven to 300⁰. Combine the spices and brown sugar together, then rub all over the ribs. Wrap the ribs tightly in tin foil, then place on a baking sheet. Slowly roast the ribs for 2 - 2 ½ hours.
  • While the ribs cook, make your maple bbq sauce. In a sauce pot, heat the olive oil over medium low heat. Add the onions and garlic and sweat for 8-10 minutes, or until softened and translucent. Add the ketchup, worcestershire, vinegar, syrup, salt, and water. Bring the sauce up to a gentle boil, then reduce to a low simmer for 35 minutes, or until the sauce has darkened and thickened.
  • When the ribs are done, remove and unwrap the foil. To finish, grill the ribs on medium heat for 3-4 minutes per side, while brushing on the sauce to slightly caramelize. Serve with additional sauce on the side.

2 racks pork baby back ribs (our favorite are baby back ribs, but this works well with St. Louis style ribs too)
1 cup barbecue sauce

Steps:

  • Preheat oven to 225 degrees.
  • Season your ribs with Dale's marinade, your favorite rib rub, grill seasoning, or simply salt and pepper.
  • Place ribs, meat side down, in baking dishes.
  • Cover the baking dishes with aluminum foil and place in the oven.
  • If you are using small baby back ribs, take out after 3.5 hours. If you are using regular baby back or St. Louis style ribs, then take out after 4 hours.
  • Drain off the drippings. Flip the ribs over using two spatulas (and an extra set of hands if you have them) so the meat side is up. Be careful, as they may be so tender they fall apart.
  • Put a layer of BBQ sauce on the ribs and return to the oven uncovered for an additional 20-30 minutes.

¾ cup maple syrup

6 bay leaves
3 sticks cinnamon
1/2 cup (90g) brown sugar
1/4 cup (75g) rock salt
1 brown onion, quartered
2 kg (about 4 1/2 pounds) American-style pork ribs
For the maple-bourbon glaze:
1 cup (250ml) bourbon or whiskey
1/2 cup (125ml) maple syrup
1/2 cup (125ml) malt vinegar
1/4 cup (60ml) Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon smoked paprika
1 tablespoon sea salt flakes

Steps:

  • For the ribs:
  • Place the vinegar, water, bay leaves, cinnamon, sugar, rock salt and onion in a large saucepan over high heat. Stir to combine and bring to the boil.
  • Add the ribs, reduce the heat to medium and cover with a tight-fitting lid. Simmer for 30-40 minutes or until the pork is tender.
  • For the glaze:
  • Place the bourbon, maple syrup, vinegar, Worcestershire sauce, mustard, paprika and salt flakes in a medium saucepan over medium heat. Stir to combine and bring to the boil. Reduce the heat to low and simmer for 8-10 minutes or until slightly reduced. Set aside.
  • To finish:
  • Preheat oven to 220°C (425°F).
