2 tablespoons soy sauce
2 tablespoons rice wine, also known as shaoxing
1 tablespoon sesame oil
2 teaspoons ground five spice
1 tablespoon salt
5 cloves garlic, crushed
1 piece fresh ginger, sliced 2 in (5 cm)
2 tablespoons bean curd
¼ cup bean curd liquid
¼ cup hoisin sauce
½ cup honey
2 lb boneless pork shoulder
1 cup white rice, cooked, for serving
2 large bok choys, steamed, for serving

Steps:

  • In a large bowl, combine the soy sauce, Shaoxing, sesame oil, five spice, salt, garlic, ginger, bean curd, bean curd liquid, hoisin, and honey.
  • Place the pork into the marinate, turn to coat completely, and cover with cling wrap.
  • Marinate for at least 3 hours, or preferably overnight.
  • Preheat the oven to 300°F (150°C). Line a baking sheet with parchment paper and set a wire rack on top.
  • Transfer the pork shoulder from the marinade to the wire rack.

1 cup plus 2 Tbsp. soy sauce, divided
1/4 cup granulated sugar
3 Tbsp. chopped garlic
1/4 cup chopped scallions
2 -3 pounds boneless, skin-on pork shoulder
1 bunch asparagus, halved
6 Yukon potatoes, diced
2 Tbsp. olive oil
Kosher salt
Freshly ground black pepper
1 cup packed dark brown sugar
1/2 cup honey

Steps:

  • Preheat the oven to 275ºF. In a large bowl, combine one cup of the soy sauce with the sugar, garlic, and scallions, stirring until mixed. Score the skin of the pork by slicing a crosshatch pattern through the skin down to the meat. This will help excess fat render out and allow more of the marinade to soak in. Place the pork in the marinade and toss to coat evenly. Marinate for one hour. On a baking sheet, place the asparagus halves to the right and diced potatoes to the left. Toss the vegetables with the oil, salt, and pepper. Place the marinated pork in the middle of the baking sheet. Bake one to one and a half hours, depending on the weight of the pork. Raise the heat of the oven to 500ºF. In a small bowl, combine the brown sugar, honey, and remaining soy sauce, stirring until smooth. Spoon the honey glaze over the top of the pork, making sure to fill the cracks and crevices on top. Bake for 20 minutes until sugar is dark brown and caramelized, and the top of the pork is crispy. Remove the vegetables and pork from the tray, making sure to save all the juices. Slice the pork into ½-inch slices, and plate with the roasted vegetables. 300ml Guinness
100ml clear honey
250g light muscovado sugar
2kg skinless, boneless loin of pork , ask your butcher for the thick end
splash white wine , Champagne or water
few sprigs flat leaf parsley

Steps:

  • To make the glaze, put the Guinness, honey and sugar into a pan. Reduce by almost half to form a sweet syrupy glaze, then allow to cool.
  • Heat oven to 200C/fan 180C/gas 6. Season the pork with pepper and salt, if you want, place on a baking tray and roast for 20 mins. Then turn the heat down to 160C/fan 140C/gas3. Remove the pork from the oven and brush all over with most of the glaze (reserving a few tbsp) cook for a further 40-50 mins, brushing and basting the pork as it cooks until it's beautifully caramelised and glazed.
  • Remove the pork from the roasting tray and leave to rest. Pour the remaining glaze into the roasting tray, then add the wine, Champagne or water. Place the pan on the heat and bring everything to the boil, simmer for a few mins until you have thick gravy. Carve pork into thin slices and place on top of the colcannon (see separate recipe). Glaze with the Guinness syrup, drizzle a little on the plates and finish with a sprig of parsley.
