Categories     main-dish

Time 2h15m

Yield 4 servings

Number Of Ingredients 8

2 tablespoons kosher salt
1/2 teaspoon freshly ground black pepper
1 (5 pound) chicken
4 heads garlic, top 1-inch cut off
2 tablespoons olive oil
1 medium lemon, halved
1 medium yellow onion, quartered
1 cup low-sodium chicken broth

Steps:

  • Heat the oven to 375 degrees F and arrange a rack in the middle.
  • Mix together salt and pepper in a small bowl and set aside. Pat chicken dry and rub all over with 1 of the garlic heads. Rub all over (under skin too) with oil and season with salt and pepper. Place 1 garlic head and 1 lemon half in the chicken cavity.
  • Arrange remaining garlic, lemon, and onion on the bottom of a 3 to 4-quart baking dish to create a bed. Place chicken on top, add broth to baking dish, and cover tightly with foil. Roast until chicken reaches 135 to 140 degrees F on an instant-read thermometer, about 1 hour.
  • Remove foil, brush chicken with pan juices, and increase oven temperature to 450 degrees F. Roast, basting occasionally, until temperature of chicken on inner thigh is 165 degrees F, skin is golden brown, and juices run clear, about 30 to 40 minutes more.
  • Let rest 10 minutes before carving. Meanwhile, pour pan juices into a small saucepan and simmer over medium heat until thickened, about 7 to 10 minutes. Taste and adjust seasoning, as desired. Carve chicken and serve each portion with 1 head of garlic and pan sauce.

SLOW-ROASTED TOMATO & GARLIC BRUSCHETTA

Slow-Roasted Tomato & Garlic Bruschetta image

Slow-roasting cherry tomatoes brings out such sweet, intense flavor. Mixed with tons of roasted garlic and fresh basil, then spooned over garlicky golden toasts, this bruschetta is familiar yet special.

Provided by Kare for Kitchen Treaty

Time 1h40m

Number Of Ingredients 10

3 pints cherry tomatoes (cut in half)
1 head garlic (cloves separated but skin stays on)
3 tablespoons extra virgin olive oil (divided)
1/4 teaspoon kosher salt + more to taste
1/8 teaspoon freshly ground black pepper + more to taste
1 tablespoon balsamic vinegar
1/4 cup basil leaves (chiffonaded)
1 French bread baguette (cut into 1/2-inch slices (for about 36 pieces))
3 tablespoons olive oil
2 to 3 garlic cloves (peeled and halved)

Steps:

  • Make the tomato topping. Preheat oven to 300 degrees Fahrenheit. Tumble the tomatoes onto a large rimmed baking sheet. Toss in the garlic. Drizzle with 2 tablespoons olive oil. Sprinkle with 1/4 teaspoon salt and 1/8 teaspoon pepper. Stir until well-coated. Bake until tomatoes have shrunken a bit and look almost dry around the edges, about 90 minutes.
  • Remove from oven and let cool. Remove garlic from the pan. Squeeze cloves out onto a cutting board. Chop up the garlic (as much as you can; it will be soft). Add to a medium bowl.
  • Drizzle balsamic vinegar over the tomatoes still on the cookie sheet. Using a spatula or wooden spoon, scrape up and stir the tomatoes, using the vinegar to help loosen up some of the dried-on tomato juices. Scrape tomatoes and juice into the bowl. Stir in basil and remaining 1 tablespoon olive oil. Taste and add additional salt and pepper if desired. Set aside.
  • Make the toasts. Preheat oven to 425 degrees Fahrenheit. Brush a large cookie sheet with 1 tablespoon of olive oil and lay the slices of bread on the sheet. Brush the tops of each slice with olive oil. Bake until golden brown around the edges, 7-9 minutes. Remove from oven and let cool slightly. Rub each piece on both sides with cut sides of garlic.
  • Serve. Spoon the tomatoes over the bread to serve, or set the bread and tomatoes on the appetizer table for guests to assemble themselves.

SLOW-ROASTED GARLIC

Slow-Roasted Garlic image

Adapted from Deborah Madison's book Vegetarian Cooking for Everyone. This is the best method for roasting garlic. It creates the smoothest roasted garlic with the best flavor. It enriches and smooths the flavor and it great in just about everything (well, except desserts). Yield depends on the size of your head of garlic. This produces surprisingly little (perhaps 2 tbs the first time I did it), so if you would like a larger quantity you may want to double or triple the recipe.

Time 1h20m

Yield 1 head roasted garlic

Number Of Ingredients 3

1 head garlic
1 teaspoon olive oil (approx) or 1 teaspoon butter (approx)
2 tablespoons water (approx) or 2 tablespoons stock (approx)

Steps:

  • Preheat oven to 350°F.
  • Peel the head of garlic of all the papery skin with the exception of the very last layer.
  • Garlic should still hold together in its original shape, but individual cloves should be visible.
  • Rub head and inside of oven proof dish (a ramekin, custard dish will work) with butter or olive oil.
  • Put water/stock in bottom of dish.
  • Cover dish with foil and place in preheated oven for 45 minutes.
  • After the 45 minutes are up, uncover the dish and bake for an additional 30 minutes.
  • Remove garlic and dish from oven and allow to cool.
  • After cooled, remove cloves and squeeze the roasted garlic from the cloves into a dish or container.
  • The roasted garlic should be a light yellowy-brown and very soft and sticky.
  • Store in the refrigerator and use in place of garlic for a milder and delicious flavor.

SLOW-ROASTED DUCK WITH OLIVE GRAVY AND GARLIC-FENNEL CONFIT

Slow-Roasted Duck with Olive Gravy and Garlic-Fennel Confit image

Provided by Melissa Clark

Yield Makes 6 to 8 servings

Number Of Ingredients 10

2 (4-pound) ducks, necks reserved, rinsed inside and out, patted dry, and any feathers and quills removed with tweezers or needle-nose pliers
1 teaspoon kosher salt, plus additional to taste
1/2 teaspoon freshly ground black pepper, plus additional to taste
1 bunch fresh thyme
1 head garlic, cloves separated, skin left on
8 shallots, peeled and halved
4 heads fennel, trimmed (fronds reserved for garnish), halved lengthwise, and cut into 1/4-inch slices
1 cup pitted kalamata olives
1 teaspoon finely grated lemon zest
1 teaspoon freshly squeezed lemon juice, plus additional to taste

Steps:

  • Preheat oven to 500°F.
  • Season each duck inside and out with salt and pepper. Using knife, skewer, or sharp fork, prick skin of each bird all over 20 to 30 times, taking care not to let knife puncture flesh (it's helpful to hold knife nearly parallel to duck and then slide it in). Stuff each cavity with 1 neck; 1/2 of thyme and garlic; 8 shallot halves; and 1/4 of fennel. Using kitchen string, tie legs loosely together.
  • Transfer ducks, breast sides up, to rack set in large roasting pan. Cover loosely with foil and roast 15 minutes. Reduce heat to 300°F and continue to roast, basting every 30 minutes and skimming fat from pan juices occasionally, 3 hours.
  • Remove foil from ducks. Stir remaining fennel into pan juices and roast 30 minutes more. Stir olives into pan juices and roast until duck skin is dark golden and crisp and meat is tender, about 30 minutes more (total roasting time: about 4 1/4 hours). Transfer ducks to cutting board.
  • Remove rack from roasting pan. With slotted spoon, remove fennel and olives from pan juices and place in blender. Pour pan juices into 1-quart glass measure. Skim fat off top and reserve for another use. Add juices to fennel and olives in blender, then add lemon zest and juice. Purée until smooth. Taste and add salt and pepper and additional lemon juice if desired.
  • Remove confit vegetables from cavities and carve ducks. Arrange meat and vegetables on platter. Garnish with chopped fennel fronds. Serve sauce alongside.

SLOW-ROASTED GARLIC & LEMON CHICKEN

Slow-Roasted Garlic & Lemon Chicken image

I cannot claim this recipe as my own. Its actually a Nigella Lawson recipe (thanks Lifestyle Channel in Australia!!!). It is a super easy and extremely tasty one-pot recipe. I make it summer and winter, but I can see why it is good for summer due to the lightness of the dish. Perfect with either the full contingency of roast veg or equally with a nice light salad, cold or warm.

Categories     One Dish Meal

Time 17m

Yield 4-6 serving(s)

Number Of Ingredients 7

1 roasting chicken, cut into 10 pieces
1 head garlic, separated into unpeeled clove
2 lemons, unwaxed and cut into 8 pieces
fresh thyme
3 tablespoons olive oil
150 ml white wine
black pepper

Steps:

  • Pre-heat the oven to 160ºC.
  • Put the chicken pieces into a roasting tin and add garlic cloves, lemon chunks and the thyme; just roughly pull the leaves off the stalks, leaving some intact for strewing over later.
  • Add the oil and using your hands mix everything together, then spread the mixture out, making sure all the chicken pieces are skin side up.
  • Sprinkle over the white wine and grind on some pepper, then cover tightly with foil and put in the oven to cook, at flavour-intensifying low heat, for 2 hours.
  • Remove the foil from the roasting tin, and turn up the oven to 200ºC and cook the uncovered chicken for another 30-45 minutes, by which time the skin on the meat will have turned golden brown and the lemons will have begun to scorch and caramelise at the edges.
  • Serve straight from the roasting tin to plate.

SLOW ROASTED TOMATOES WITH GARLIC AND OREGANO

Slow Roasted Tomatoes with Garlic and Oregano image

These firm but juicy tomatoes burst with the flavor of the sun. They take no time to prepare, but need a long time in the oven and smell fantastic while cooing. Plum tomatoes have less moisture and work well, but you can use any vine ripened variety, just as long as they have some taste.Unknown Source
