1 tablespoon ground cumin
1 tablespoon ground coriander
2 teaspoons dried oregano
1/2 teaspoon paprika
1/2 teaspoon red pepper flakes

1 pound dried Great Northern beans, soaked overnight and rinsed
4 stalks celery, chopped
4 cloves garlic, minced
2 cans green chiles, chopped
2 medium onions, diced
2 green bell peppers, chopped
1 jalapeno, sliced
4 cups chicken broth
1 cup whole milk
1/4 cup masa
1 1/2 cups frozen sweet corn
Juice of 1 lime
1/2 cup grated Monterey Jack cheese, plus more for serving
Sour cream, for serving
Chopped fresh cilantro, for serving
Corn tortillas, warmed, for serving

Steps:

  • Add the chicken breasts to a slow cooker. In a bowl, mix the cumin, coriander, oregano, paprika, red pepper flakes and some salt and pepper, then sprinkle over the chicken. Add the beans, celery, garlic, canned chiles, onions, bell peppers and jalapeno. Pour in the chicken broth, put the lid on and cook on low until the beans are cooked, the vegetables are soft and the flavors are combined, about 7 1/2 hours.
  • Mix the milk with the masa and add to the slow cooker. Add the frozen corn straight from the freezer and continue to cook until the sauce has thickened, another 30 minutes.
  • Remove the chicken to a board and shred using 2 forks. Return to the slow cooker, then add the lime juice, sprinkle over the Monterey Jack cheese and stir to melt.
  • To serve: Ladle the chili into bowls and garnish with a dollop of sour cream, extra cheese and cilantro. Roll up warm corn tortillas and serve on the side of the bowl.

1 serrano pepper
2 cloves garlic, unpeeled
½ cup chopped fresh cilantro
1 teaspoon salt

2 skinless, boneless chicken breast halves

1 tablespoon vegetable oil
2 pounds boneless turkey breast
2 onions, chopped
4 cloves garlic, minced
1 (15 ounce) can cannellini (white) beans, drained
1 (29 ounce) can white hominy, drained
3 (14 ounce) cans low-sodium chicken broth
3 (15 ounce) cans cannellini (white) beans, drained
¼ cup chopped fresh cilantro
1 ½ tablespoons ground cumin
1 teaspoon Cajun seasoning
3 serrano chile peppers

Steps:

  • Heat the vegetable oil in a large skillet over medium heat, and pan-fry the turkey breast until the meat is no longer pink, about 10 minutes per side. Transfer the turkey breast into a bowl to cool; shred it with 2 forks. Set the turkey meat aside. In the same skillet, cook the onions and garlic over medium heat until the onion is translucent, about 5 minutes; scrape the onions and garlic, along with any drippings, into the bowl with the turkey.
  • Place 1 can of cannellini beans, the hominy, and the chicken broth into a slow cooker. With an immersion blender, blend the mixture until smooth. Transfer the shredded turkey, onions, garlic, 3 more cans of cannellini beans, the cilantro, cumin, and Cajun seasoning into the slow cooker, and stir to combine. Wearing gloves, cut off the serrano chile stems, split the chiles, and scrape the seeds and membranes from 2 of the chiles with a spoon. Mince all 3 chiles. For milder flavor, seed and remove membranes from all the chiles. Mix the serrano chiles into the soup.
  • Cover the cooker, and cook on Low setting for 4 to 6 hours or High setting for 2 to 3 hours.

48 ounces cannellini beans, rinsed and drained
16 ounces white hominy, rinsed and drained
3 cups low sodium chicken broth
salt

6 chicken thighs (bone in, skin on, fat trimmed)
1 tablespoon vegetable oil
2 onions, finely chopped
4 jalapeno chiles (seeded and finely chopped)
6 garlic cloves, minced
1 1/2 tablespoons ground cumin
2 teaspoons ground coriander
1/4 cup cilantro (fresh, finely chopped)
2 tablespoons pickled jalapeno peppers (drained and minced)

Steps:

  • Puree 1 can of beans, hominy, broth, and 3/4 tsp salt in blender until completely smooth.
  • Pour into slow cooker.
  • Brown chicken and pat dry with paper towels and season with salt and pepper.
  • Heat oil in a large skillet over medium-high heat until just smoking.
  • Cook thighs, skin-side down, until skin is well-browned and fat has rendered, about 5 minutes.
  • Remove and discard skin, then add thighs to slow cooker.
  • Pour off all about 2 tablespoons fat from skillet.
  • Cook onions, chiles, and 1/2 tsp salt until golden brown, stirring occasionally, about 8 minutes.
  • Add garlic, cumin, and coriander and cook until fragrant, about 30 seconds.
  • Transfer half of onion mixture to slow cooker and reserve remaining mixture in refrigerator.
  • Add remaining beans to slow cooker.
  • Cover and cook on low until chicken is tender, about 4 hours.

  • When cool enough to handle, discard bones and shred chicken into bite-sized pieces.

1 1/2-2 lbs boneless skinless chicken (2 boneless, skinless chicken breasts, split & 2 boneless skinless chicken thighs)
15 ounces cannellini beans (white kidney)
10 ounces smoked turkey sausage, sliced 1/4 inch thick
4 cups chicken stock
1/2 cup dry white wine
1 (4 ounce) can diced green chilies (roasted & peeled)
5 garlic cloves, minced
2 cups yellow onions, chopped
1/4 cup red bell pepper, thinly sliced
1/4 cup heavy cream
3 tablespoons olive oil
3/4 tablespoon kosher salt
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon white pepper
1/8 teaspoon ground coriander
cornstarch (optional)
pickled jalapeno pepper
sour cream
chipotle cheddar cheese, shredded
monterey jack cheese, shredded
roasted red pepper, diced
salsa
Tabasco sauce
green onion, chopped
turkey sausage, diced

Steps:

  • Heat 2 tablespoons olive oil in skillet over medium-high heat.
  • Add onions, garlic, coriander, cumin and oregano. Saute until translucent and fragrant, approximately 5 minutes.
  • Add red peppers and sauté for 2 more minutes. Empty contents of skillet into slow cooker.
  • Heat one tablespoon oil in same skillet over medium-high heat.
  • Add chicken to skillet (working in batches if necessary) and cook until it is no longer pink on the outside, approximately 5-7 minutes. Transfer to slow cooker.
  • Add wine, chicken stock, green chiles, beans and white pepper to slow cooker and turn on to low. Cook for 6-7 hours.
  • Remove chicken from slow cooker and shred with a fork. Return to slow cooker.
  • Add cream, salt, and turkey sausage, turn cooking setting to high and remove lid or simple leave lid slightly ajar to let moisture escape. Cook until sauce is thickened, approximately 30-45 minutes.
  • If a thicker chili is desired: Mix 1 tablespoon cornstarch with 2 tablespoons water or stock for each cap of liquid. Add to slow cooker and mix. Allow sauce to thicken before serving.
  • Serve in bread bowl and top with favorite garnishes.
  • TIPS.
  • For a hearty all in one meal, serve in a warm bread bowl.
  • If you like your chili extra spicy, add ½ a diced jalapeno and sauté with onions before adding to slow cooker.

2 tablespoons extra-virgin olive oil
1 small yellow onion, diced
3 cloves garlic, crushed
3 (15 ounce) cans white beans, drained
2 (14.5 ounce) cans no-salt-added diced tomatoes, drained
½ (16 ounce) jar salsa verde
2 cups low-sodium chicken broth
1 cup uncooked white rice
2 peppers green chile peppers, seeded and minced
1 medium jalapeno pepper, seeded and diced
1 teaspoon ground cayenne pepper
1 teaspoon dried oregano
1 teaspoon ground cumin
salt and ground black pepper to taste
1 ½ pounds ground turkey

Steps:

  • Heat oil in a skillet over medium-high heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Transfer onion mixture to a 6-quart slow cooker. Add beans, tomatoes, salsa, chicken broth, rice, chile peppers, jalapeno, cayenne pepper, oregano, cumin, salt, and pepper.
  • Cook on Low for 7 hours.
  • At the 7-hour mark, keep slow cooker temperature on Low and heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until crumbly and no longer pink, 5 to 7 minutes. Add to the slow cooker, mix thoroughly, and continue to cook for 50 to 55 more minutes.

Not your average chili. Because this is a chili and not a stew or soup, it is deliberately under-watered. I would add 1 cup of water if you are planning on leaving the house while this cooks, especially on High. And if you are using frozen chicken, allow an extra hour to reach the correct consistency. Also, you may need to add salt depending on how salty the broth you are using is. If you like your chili spicier, I would add a lot more jalapenos. I think I used about 3 tablespoons on a half recipe of this. For a more intense cumin flavor, use cumin seeds instead or add the cumin at the end.

½ pound dried Great Northern beans
1 pound skinless, boneless chicken breast halves
1 small onion, chopped
3 cups chicken broth
1 tablespoon chopped jalapeno pepper
1 teaspoon ground cumin

1 tomato, chopped
4 ounces shredded Mexican cheese blend
¼ cup chopped fresh cilantro, or to taste

Steps:

  • Place Great Northern beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse beans.
  • Place beans, chicken, onion, chicken broth, jalapeno pepper, cumin, oregano, and garlic powder in a slow cooker.
  • Cook on High for 4 hours or on Low for 8 hours. Remove chicken breasts from the chili and place on a work surface; shred chicken breasts with a fork and mix back into chili.
  • Spoon chili into 4 bowls; top each serving with 1/4 of the chopped tomato, 1 ounce Mexican cheese blend, and 1 tablespoon chopped cilantro.

From Mel's Kitchen Cafe. Simple and freakishly delicious. I have made this a time or two and never soaked the beans the night before (I use Great Northern dry beans) and they soften perfectly during the cooking time; however, without actually trying it, I'm guessing if you did soak the beans overnight, you might be able to get away with a shorter cooking time (or maybe 5 hours on high or something like that). Also, before adding the chicken back in and before stirring in the cream cheese and corn, you can blend a couple cups of the soup to a smooth consistency and stir it back into the pot for a thicker variation. I've done it both ways...and love it both ways. The flavor is ultimately the winning factor. Finally, this soup is not spicy. If you'd like to make it with more heat, you can leave the seeds in the jalapenos or add a touch or more of cayenne pepper or red pepper flakes.

1 lb chicken breasts or 2 chicken breasts, trimmed of fat
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1 (14 ounce) can diced tomatoes, undrained
4 cups low sodium chicken broth
12 ounces dry white beans (rinsed and picked through to remove any stones or bad beans)
1 teaspoon salt
1/2 teaspoon pepper
8 ounces light cream cheese, cut into cubes
1 cup frozen corn kernels
6 -8 slices crumbled or chopped bacon

Steps:

  • 1. Add all the ingredients except the cream cheese, corn and bacon to a 5-quart slow cooker. Cook on low for 7-9 hours.
  • 2. Remove the chicken and chop into pieces or shred into bite-sized pieces. See the note above about thickening part of the soup. Make your decision. Then return the chicken to the slow cooker.
  • 3. Stir in the cubed cream cheese and the corn. Cover the slow cooker to let the cream cheese soften and the corn heat through, about 10-15 minutes.
  • 4. Stir to combine. Add additional salt and pepper to taste. Serve topped with the crumbled bacon.

SKINNY SLOW COOKER WHITE BEAN CHICKEN CHILI

3/4 pound boneless skinless chicken breasts
1/2 teaspoon salt
1/4 teaspoon pepper
1 medium onion, chopped
1 jalapeno pepper, seeded and chopped (optional)
2 teaspoons dried oregano
1 teaspoon ground cumin
4 garlic cloves, minced
2 cans (15 ounces each) white kidney or cannellini beans, rinsed and drained
3 cups fat free chicken broth
1-1/2 cups (6 ounces) low fat shredded cheese
Fat Free Sour cream and minced fresh cilantro, optional

Steps:

  • Sprinkle chicken with salt and pepper then place it in the bottom of the Slow Cooker. Then add the onion, jalapeno, garlic, oregano and cumin on top of the chicken.
  • Next add white beans and pour the chicken broth over everything. Cover and cook on low for 6 to 8 hours or 4 to 6 hours on high.
  • Shred chicken and stir before serving. Sprinkle with cheese and garnish with sour cream and cilantro if desired.
