This is one of my own recipes, and one that I'm particularly proud of. It's not very spicy, so you can alter the spices as you like. This is great served with corn bread, and the leftovers make great nachos! I'm the only vegetarian in the family, but everyone else loves it!

Categories     Tofu

Number Of Ingredients 15

1/2 cup olive oil
4 onions, chopped
2 green bell peppers, seeded and chopped
2 red bell peppers, seeded and chopped
4 cloves garlic, minced
1 (14 ounce) package firm tofu, drained and cubed
4 (15.5 ounce) cans black beans, drained
2 (15 ounce) cans crushed tomatoes
2 teaspoons salt
1/2 teaspoon ground black pepper
2 teaspoons ground cumin
6 tablespoons chili powder
2 tablespoons dried oregano
2 tablespoons distilled white vinegar
1 tablespoon liquid hot pepper sauce, such as Tabasco™

Steps:

  • 1Heat the olive oil in a large skillet over medium-high heat. Add the onions; cook and stir until they start to become soft. Add the green peppers, red peppers, garlic and tofu; cook and stir until vegetables are lightly browned and tender, the whole process should take about 10 minutes. 2Pour the black beans into the slow cooker and set to Low. Stir in the vegetables and tomatoes. Season with salt, pepper, cumin, chili powder, oregano, vinegar and hot pepper sauce. Stir gently and cover. Cook on LOW for 6 to 8 hours.

Tips:

  • Soak the beans overnight. This will help them cook more evenly and quickly in the slow cooker.
  • Use a variety of beans. This will give your chili a more complex flavor and texture. Some good options include black beans, kidney beans, pinto beans, and chickpeas.
  • Don't overcook the vegetables. You want them to be tender, but not mushy.
  • Add the spices gradually. Start with a small amount and then add more to taste. This will help you avoid making your chili too spicy.
  • Serve with your favorite toppings. Some good options include sour cream, shredded cheese, diced avocado, and chopped cilantro.

Conclusion:

This vegetarian chili is a delicious and easy-to-make meal that is perfect for a cold day. It is packed with flavor and nutrients, and it can be easily customized to your liking. So next time you are looking for a hearty and satisfying meal, give this vegetarian chili a try. You won't be disappointed!
