Tips:

  • Choose the right cut of chicken: Boneless, skinless chicken breasts or thighs work best for this recipe. They are lean and cook quickly in the slow cooker.
  • Use a variety of vegetables: Feel free to add other vegetables to the slow cooker along with the chicken. Some good options include carrots, celery, potatoes, onions, and garlic.
  • Season the chicken well: Be sure to season the chicken generously with salt, pepper, and garlic powder before cooking. This will help to enhance the flavor of the dish.
  • Cook the chicken on low for 6-8 hours: This will ensure that the chicken is cooked through and tender. If you are using a frozen chicken breast, you will need to cook it for 8-10 hours on low.
  • Shred the chicken before serving: Once the chicken is cooked, use two forks to shred it into bite-sized pieces. This will make it easy to serve and eat.

Slow cooker V8 chicken is a delicious and easy meal that is perfect for a busy weeknight. It is also a great way to use up leftover chicken. The chicken is cooked in a flavorful V8 juice and vegetable sauce, and it comes out tender and juicy. Serve the chicken over rice, noodles, or mashed potatoes, and enjoy!
