2 smoked turkey legs
½ onion, diced
2 bay leaves
2 stalks celery, diced
4 large carrots, sliced
1 (14.5 ounce) can petite diced tomatoes, undrained

2 tablespoons grated Parmesan cheese, divided

  • Place the beans into a large bowl, fill the bowl with water, and cover the bowl with a cloth. Allow to soak overnight. Drain and rinse the beans.

1 (16 ounce) bag dried navy beans, sorted, rinsed (2 cups)
3 cups chicken broth
1/4 cup olive oil
3/4 cup chopped parsley
1 tablespoon italian seasoning
2 tablespoons chopped garlic
1 1/2 teaspoons salt
1/2 teaspoon ground pepper
1 1/2 lbs turkey thighs, skin removed
1 1/2 cups frozen cut green beans, thawed

Steps:

  • Spray 5-quart slow cooker with cooking spray. In 3-quart saucepan, heat water to boiling over medium-high heat. Add navy beans. Reduce heat to medium-low; simmer uncovered 10 minutes. Drain; rinse with cold water. Place beans in slow cooker; add broth.
