SHEET PAN TURKEY CHILI WITH CORNBREAD "DUMPLINGS"

Sheet Pan Turkey Chili with Cornbread

A different way to prepare chili and cornbread! This is a bit on the spicier side, so go easy on the chili powder and jalapenos for a milder version. This really fills up the sheet pan to the top, but don't worry, it will fit! If you're worried about spills, place aluminum foil on the oven rack before baking.

SOUTHWESTERN TURKEY CHILI AND CORNBREAD

Southwestern Turkey Chili and Cornbread image

Provided by Sandra Lee

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 13

Nonstick vegetable cooking spray
1 (11-ounce) can Mexicorn
1 egg
1 (8 1/2-ounce) package corn muffin mix
10 ounces lean ground turkey, crumbled
1 tablespoon all-purpose flour
1 tablespoon olive oil
1 (28-ounce) can whole tomatoes
2 (14 1/2-ounce) can spicy black beans
1/4 cup tomato paste
Sour cream, for garnish
Chopped fresh cilantro leaves, for garnish
Chopped red onion, for garnish

Steps:

  • Spray an 8 by 8 by 2-inch baking pan with nonstick spray. Drain all but 2 tablespoons liquid from Mexicorn. Place reserved 2 tablespoons liquid in a medium bowl. Add egg to liquid and whisk to blend. Stir in Mexicorn. Add corn muffin mix and stir until just combined. Transfer mixture to prepared pan. Bake until a toothpick inserted into center comes out clean, about 20 minutes.
  • Meanwhile, in a large resealable bag, toss turkey with flour until flour is absorbed into meat. Heat oil in a wide 2-quart pot over medium heat. Add turkey and cook until browned, about 5 minutes. Crush the canned tomatoes by hand and add tomatoes and liquid. Add beans and tomato paste. Simmer over medium-low heat until chili is slightly thick, about 8 minutes. Spoon chili into bowls. Top with sour cream, cilantro, and onion. Serve hot with corn bread.
  • Preheat oven to 400 degrees F.

Tips:

  • Choose the right turkey: For the best flavor, use a bone-in turkey breast or thigh. You can also use ground turkey, but it won't be as flavorful.
  • Brown the turkey first: Browning the turkey before adding it to the slow cooker will help to develop its flavor and prevent it from becoming dry.
  • Use a variety of beans: This recipe calls for black beans, pinto beans, and corn, but you can use any type of beans that you like. Great Northern beans, kidney beans, and white beans are all good options.
  • Add some heat: If you like your chili spicy, add a chopped jalapeño pepper or a teaspoon of chili powder. You can also add a can of diced green chilies.
  • Make it your own: This recipe is easily customizable. Feel free to add other vegetables, such as diced onions, bell peppers, or carrots. You can also add different seasonings, such as cumin, oregano, or paprika.
  • Serve with cornbread dumplings: Cornbread dumplings are the perfect way to soak up all the delicious chili. To make the cornbread dumplings, simply combine 1 cup of cornmeal, 1/2 cup of flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, 1/2 cup of milk, 1/2 cup of sour cream, and 1 egg. Drop the dumplings by spoonfuls into the chili and cook for 15-20 minutes, or until they are cooked through.

Conclusion:

This slow cooker turkey chili is a hearty and flavorful meal that is perfect for a cold winter day. It is easy to make and can be customized to your liking. Serve it with cornbread dumplings for a complete meal that the whole family will enjoy.
