Categories     One Dish Meal

Time 5h5m

Yield 4-6 , 4-6 serving(s)

Number Of Ingredients 8

6 chicken breasts (boneless, skinless)
1 (15 ounce) can pineapple slices (with juice)
1/3 cup brown sugar (packed)
2 tablespoons lemon juice
1/4 teaspoon ginger (ground)
1/4 cup cornstarch
salt
cooked rice (to serve with)

Steps:

  • place chicken breasts in slow cooker, sprinkle with a little salt.
  • place pineapple slices over chicken.
  • combine pineapple juice, brown sugar, lemon juice, ginger, and cornstarch, stir until cornstarch mixes with liquids, pour over chicken.
  • cover, cook on low for 4-5 hours or on high for 2 1/2-3 hours.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs work best in this recipe. If you use chicken with bones, adjust the cooking time accordingly.
  • Use fresh pineapple: Fresh pineapple adds a bright, tropical flavor to this dish. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • Don't overcrowd the slow cooker: Make sure there is enough space for the chicken and pineapple to cook evenly. If the slow cooker is too crowded, the chicken may not cook through properly.
  • Cook on low for best results: Cooking the chicken on low for 6-8 hours will help to tenderize the chicken and infuse it with flavor. If you cook the chicken on high, it may become dry and tough.
  • Serve with your favorite sides: This tropical chicken can be served with a variety of sides, such as rice, quinoa, roasted vegetables, or a salad.

Conclusion:

This slow cooker tropical chicken is an easy and delicious weeknight meal. With just a few simple ingredients, you can create a flavorful and exotic dish that your family will love. The chicken is tender and juicy, and the pineapple adds a bright, tropical flavor. Serve this dish with your favorite sides for a complete and satisfying meal.
