SLOW COOKER SWEET POTATO CHOWDER RECIPE

Slow Cooker Sweet Potato Chowder Recipe image

Yield 6

Number Of Ingredients 14

1 onion (diced)
2 large sweet potatoes (cubed)
1 cup chopped broccoli
1 cup chopped carrots
1 (15.25 ounce) can corn (do not drain)
4 cups chicken broth
8 strips bacon (cooked and crumbled)
1 teaspoon salt
1 teaspoon pepper
1 teaspoon dried parsley
1 teaspoon dried thyme
1 1/2 cups milk
3 Tablespoons flour
salt and pepper, to taste

Steps:

  • In the slow cooker combine onion, sweet potato, broccoli, carrots, canned corn, chicken broth, bacon, and seasonings.
  • Cook on high for 3 hours or on low for 5 hours, until potatoes are soft.
  • 15 minutes before serving, in a small bowl combine milk and flour. Whisk until smooth.
  • Pour milk mixture into the slow cooker and stir.
  • Let simmer for 15 minutes to let milk thicken up.
  • Season with additional salt and pepper as desired.

Tips:

  • Use a variety of sweet potatoes. Sweet potatoes come in a variety of colors, from classic orange to purple and white. Each variety has a slightly different flavor and texture, so mix and match to create a chowder with complex flavors and textures.
  • Roast the sweet potatoes before adding them to the chowder. Roasting the sweet potatoes intensifies their flavor and gives them a slightly smoky taste. To roast the sweet potatoes, simply toss them with olive oil and salt and pepper and roast them in a preheated oven at 400 degrees Fahrenheit for about 30 minutes, or until they are tender.
  • Use a good quality chicken broth. The chicken broth is the base of the chowder, so it's important to use a good quality broth. Look for a broth that is made with real chicken and has a rich, flavorful taste.
  • Don't overcook the chowder. The chowder is done cooking when the vegetables are tender and the broth is hot and bubbly. If you overcook the chowder, the vegetables will become mushy and the broth will lose its flavor.
  • Garnish the chowder with your favorite toppings. Some popular toppings for sweet potato chowder include bacon, cheese, sour cream, and chives. You can also add a dollop of hot sauce or a sprinkle of paprika for a little extra flavor.

Conclusion:

Sweet potato chowder is a delicious and easy-to-make soup that is perfect for a cold day. It is packed with flavor and nutrients, and it can be made with a variety of different ingredients. Whether you are looking for a vegetarian chowder or a chowder with chicken or sausage, there is a recipe out there that is perfect for you. So next time you are looking for a warm and comforting soup, give sweet potato chowder a try.
