SLOW COOKER STEAK SOUP

I found this recipe in Southern Living and made it the other night for dinner. I don't know why it is called a soup there is really no broth. This to me is more like a stick to your ribs stew. I used carne asada cubed. This was so good. Try it with a good garlic bread. Awesome!

HEARTY STEAK AND VEGGIE SLOW COOKER SOUP

Hearty Steak And Veggie Slow Cooker Soup image

I use leftover pasta for this, but you can cook some specifically for this soup or you can buy precooked packaged pasta. I add the pasta to the individual servings instead of all at once into the soup to keep it from getting soggy. Tastes even better the next day! It has a rich broth that's full of flavor.

Time 11h45m

Number Of Ingredients 17

6 c broth
1 Tbsp olive oil
1 1/2 lb sirloin cut into bite sized pieces
6 oz fresh green beans
2 chopped bell peppers
4 medium tomatoes chopped
5 Tbsp tomato paste
4 Tbsp balsamic vinegar
8 clove garlic minced
1 packet stevia
4 tsp coarse ground black pepper
2 c cooked rotini
2 c roughly chopped cabbage
1/2 c chopped parsley
4 Tbsp oregano, dried
4 tsp thyme, dried
salt to taste

Steps:

  • 1. In a large skillet, heat oil on medium high. Add steak and cook until browned (about 3 minutes). Transfer to slow cooker and add beans, bell peppers, tomatoes, tomato paste, vinegar, garlic, stevia, black pepper and broth and stir to combine. Cook on low for 10 hours.
  • 2. Stir in cabbage, parsley, oregano, thyme, and salt. Cover and cook for an additional 30 minutes on high..
  • 3. Spoon about 1/3 cup cooked pasta into bowl and cover with soup to serve.

Tips:

  • Choose the right cut of beef: Chuck roast, round roast, or brisket are all good options for slow-cooker steak soup. These cuts are tough, but they become tender when cooked slowly in liquid.
  • Brown the beef before cooking: Browning the beef adds flavor and helps to prevent it from becoming tough. To brown the beef, heat a large skillet over medium-high heat. Add the beef and cook, stirring occasionally, until browned on all sides.
  • Use a good quality beef broth: The beef broth is the base of the soup, so it's important to use a good quality broth. Look for a broth that is low in sodium and has a rich, beefy flavor.
  • Add vegetables and seasonings: Once the beef is browned, add it to the slow cooker along with your favorite vegetables and seasonings. Some good options include carrots, celery, onions, potatoes, garlic, thyme, rosemary, and bay leaves.
  • Cook the soup on low for 8-10 hours: The soup will need to cook for a long time in order for the beef to become tender. Cook the soup on low for 8-10 hours, or until the beef is fall-apart tender.
  • Serve the soup with your favorite toppings: Once the soup is cooked, serve it with your favorite toppings. Some good options include sour cream, shredded cheese, croutons, or bread.

Conclusion:

Slow-cooker steak soup is a delicious and easy-to-make meal that is perfect for a cold winter day. With just a few simple ingredients, you can create a hearty and flavorful soup that the whole family will love. So next time you're looking for a comforting and satisfying meal, give this slow-cooker steak soup a try.
