Tips:

  • Prep the vegetables in advance: Chop the onion, celery, and carrots ahead of time to save time when you're ready to make the soup.
  • Use canned or frozen spinach: Fresh spinach can be used, but it will wilt down a lot during cooking. Canned or frozen spinach is a good way to add extra nutrients and flavor to the soup without having to use a lot of fresh spinach.
  • Use a variety of beans: This recipe calls for black beans and kidney beans, but you can use any type of beans you like. Some other good options include pinto beans, navy beans, or great northern beans.
  • Add some spice: If you like a little bit of spice, add a teaspoon of chili powder or cumin to the soup. You can also add a pinch of red pepper flakes for a bit of heat.
  • Serve with your favorite toppings: Some good options for toppings include sour cream, shredded cheese, diced avocado, or chopped cilantro.

This slow-cooker spinach bean soup is a healthy and flavorful meal that is perfect for a busy weeknight. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy soup recipe, give this one a try!
