My mother-in-law made a large batch of sauerkraut one summer and to use it up, we invented this (both out of hunger and necessity to use up all that sauerkraut!) It takes just seconds to throw in your slow cooker and you come home to a yummy dinner.

2 tablespoons spicy horseradish mustard
1 (4 pound) boneless pork loin roast
1 onion, chopped
1 Granny Smith apple, chopped
1 (16 ounce) can sauerkraut with juice
salt and pepper to taste
1 ½ cups chicken broth

Steps:

2 lbs boneless pork loin
2 tablespoons olive oil
2 sprigs fresh thyme leaves
salt and pepper
4 lbs sauerkraut
1 lb kielbasa, cut into 3-inch piece
1 -2 apple, medium to large, chopped
