Tips:

  • Select ripe and flavorful tomatoes. The quality of the tomatoes will greatly impact the flavor of the soup, so choose tomatoes that are ripe, juicy, and have a deep red color.
  • Roast the tomatoes before simmering. Roasting the tomatoes brings out their natural sweetness and caramelizes them slightly, adding a rich and complex flavor to the soup.
  • Use a variety of fresh herbs. Fresh herbs like basil, oregano, and thyme add a bright and aromatic flavor to the soup. Use a generous amount of herbs to really let their flavors shine through.
  • Don't overcrowd the slow cooker. If you overcrowd the slow cooker, the tomatoes won't roast evenly and the soup will be watery. Leave some space between the tomatoes so that they can roast properly.
  • Simmer the soup for at least 2 hours. This will allow the flavors to develop and mellow. The longer you simmer the soup, the better it will taste.

Conclusion:

This slow cooker roasted tomato basil soup is a delicious and easy recipe that's perfect for a weeknight meal or a casual gathering. The roasted tomatoes give the soup a rich and complex flavor, while the fresh basil adds a bright and aromatic touch. Serve the soup with a side of crusty bread or a grilled cheese sandwich for a complete meal.
