2 (15 oz.) cans organic chopped tomatoes
1 cup low sodium chicken broth
2 tsp. Cajun seasoning
¼ tsp. ground black pepper
2 medium bay leaves
1 tsp. dried thyme
3 lbs. skinless, boneless chicken thighs
fresh chopped parsley and scallions ((for garnish))
hot sauce ((optional))

1 package(s) (8 oz.) sliced fresh mushrooms
2 cup(s) baby carrots
1 small onion, chopped
1 can(s) (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup(s) frozen peas, thawed, drained
1/2 cup(s) (1/2 of 8-oz. tub) philadelphia chive & onion cream cheese spread

Steps:

  • TOSS chicken with flour in slow cooker.
