SLOW COOKER NORTHERN WHITE BEAN

Slow Cooker Northern White Bean image

White beans are cooked in a slow cooker with smoked neck bones, aromatic vegetables, seasonings, and chicken broth. This recipe can be used for cooking most any dried bean in the slow cooker. Adjust liquid when cooking tougher skin beans (such as pinto beans). Add garlic and onion powder to taste, if desired.

WHITE BEAN CHOWDER

White Bean Chowder image

A lovely, filling soup with sweet and spicy flavors from the sweet corn and spices. I found this in a Dairy Favorites card at the grocery and made a few tweaks for our preferences. You can also sub white cannellini beans for the great northern - I just find it easier to locate the great northerns in my area.

Tips:

  • Don't overcrowd the slow cooker: If you add too much food to the slow cooker, it will take longer to cook and the ingredients won't cook evenly.
  • Season to taste: Taste the chowder before serving and add more salt, pepper, or herbs as needed.
  • Serve with your favorite toppings: Try serving the chowder with shredded cheese, crumbled bacon, or a dollop of sour cream.
