2 quarts apple cider or juice
3 cups cranberry juice

Steps:

  • Place cinnamon sticks and cloves on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. , In a 5-qt. slow cooker, combine the cider, cranberry juice and brown sugar add spice bag. Cover and cook on high for 2 hours or until cider reaches desired temperature. Discard spice bag.

1/2 teaspoon fresh nutmeg (grated )
1 gallon apple cider
2 cups pineapple juice
1 cup fresh cranberries
1 orange (thinly sliced)

Steps:

  • Using an unfiltered coffee filter or piece of cheesecloth, place cinnamon sticks, allspice, cloves, and ginger. Tie off with butcher twine. Be sure to use cheesecloth if preparing in Instant Pot.
  • Place juice/cider, pineapple juice, orange slices, cranberries, grated nutmeg, and mulling spices in the slow cooker.
  • Cook on low for 4-6 hours or on high for 2-3 hours. Remove the bundle of spices and serve.

1 medium orange
1 (1 1/2-inch) piece fresh ginger
5 (3-inch) cinnamon sticks
1 tablespoon whole cloves

Steps:

  • Fill the slow cooker. Pour the cider or juice into a 5-quart or larger slow cooker.
  • Add the fresh ingredients. Cut the orange into 1/4-inch-thick rounds. Cut the ginger into 1/4-inch-thick slices. Add both to the slow cooker.
  • Add the spices. Add the cinnamon sticks. Add the cloves and optional spices. To make it easier to serve, place the cloves and spices in a tea ball first, or place in a double layer of cheesecloth or paper coffee filter, gather it up into a sachet, and tie closed with kitchen twine.
  • Slow cook the cider for 4 hours. Cover the slow cooker and cook until the flavors meld, 4 hours on LOW. (If there are clumps of spices floating at the top that you wish to remove, strain the cider through a fine-mesh strainer or cheesecloth into a large pot.) 8 cups apple cider*
1/4 cup honey
1 orange
2 tablespoons whole cloves
1 cup cranberries
2 5- inch cinnamon sticks
3 5- inch rosemary sprigs
Additional rosemary and fresh cranberries for garnish (if desired)

Steps:

  • Pour apple cider into a 2.5-quart or larger Crock Pot or other slow cooker. Stir in honey. It may remain clumpy; that's okay. It will dissolve when the mixture heats up.
  • With a toothpick, poke holes in the orange, about 1/2 inch to 1 inch apart. Carefully stick the cloves, pointy end down, into the holes. Add the orange to the cider along with the cranberries, cinnamon sticks, and rosemary. Push the rosemary down to help make sure it's submerged.
  • Cook on low until hot and the cranberries have started to burst, 3-4 hours, taking care to not let the cider boil. Very carefully with a fork or masher, gently crush the remaining cranberries to pop them. They might splurt, so be careful! I like to do this to get as much flavor out of the cranberries as possible without overcooking the cider.
  • Strain the mixture through a fine-mesh sieve into a large bowl. Add the strained cider back to the Crock Pot. I like to add the cinnamon sticks and orange back as well, just for a festive touch. Discard the remaining solids. Serve immediately or keep the Crock Pot on the warm setting to keep the cider hot. Garnish individual mugs of cider with additional fresh rosemary sprigs and fresh cranberries, if desired.

1 750 ml bottle of Merlot or another fruity (but not too sweet!) red wine such as Cabernet Sauvignon or Zinfandel
2 cups orange juice (I either like squeezing my own or buying a 100% pure fresh-squeezed version)
1 cup fresh or frozen whole cranberries (rinsed and picked through)
1/3 cup granulated sugar plus more to taste
1 medium orange (I like to use an organic orange for recipes like this because it will be soaking in the beverage, peel and all)
2 tablespoons whole cloves
2 3-inch cinnamon sticks
1/2 cup brandy
Garnishes (if desired: cinnamon sticks, orange slices, and/or fresh cranberries threaded onto a cocktail pick)

Steps:

  • Add wine, orange juice, cranberries, and sugar to a 3-quart or larger Crock Pot. Stir to help sugar begin to dissolve.
  • Wash orange thoroughly and stud the orange with the cloves - just stick the cloves directly into the peel, pointy end first. I like to poke it all over with a toothpick first to make holes for the cloves.
  • Add the clove-studded orange and the cinnamon sticks to the wine.
  • Cook on low for 2 - 3 hours, or until the berries are tender. You can cook it for an hour or two longer if you wish, but take care that it doesn't boil.
  • Remove the orange and the cinnamon sticks, then VERY CAREFULLY pour the mulled wine through a fine-mesh sieve into a large heat-proof bowl. Using the back of the spoon, press on the cranberries to get all of the juices into the bowl. A berry or two may burst, so watch out!
  • Return wine to the Crock Pot and stir in the brandy. Taste and add additional sugar until it's just sweet enough. I like it just past the pucker point; you may prefer a sweeter mulled wine.
  • Ladle into mugs and serve with a cinnamon stick, an orange slice, and/or fresh cranberries pushed onto a cocktail stick, if desired.
  • Keep your Crock Pot on the "warm" setting to keep the wine nice and hot. If your Crock Pot doesn't have a warm setting, try alternating between "low" and off.

3 tablespoons green cardamom pods
2 teaspoons whole black peppercorns
2 (3- to 4-inch) cinnamon sticks, plus extra for garnish, if desired
1 teaspoon whole allspice berries
1 (4- to 5-inch) piece fresh ginger, peeled
1/2 lemon, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
1/2 small orange, scrubbed, thinly sliced and seeded, plus extra for garnish, if desired
Generous pinch of kosher salt
1 gallon apple cider, preferably unfiltered
1 (750-milliliter) bottle rye whiskey, plus more if desired (optional)
1 teaspoon vanilla extract

Steps:

  • Put the cardamom pods on a cutting board. Lay the flat of a chef's knife over them and gently smack the flat of the knife to lightly crush and crack the pods. Add the cardamom pods, peppercorns, cinnamon sticks and allspice berries to a medium skillet over medium-high heat. Toast the spices, shaking the pan often, until very fragrant, about 3 minutes.
  • Transfer the cinnamon sticks into a 6- to 8-quart slow cooker. Tie up the remaining spices into a cheesecloth bundle, and add that to the slow cooker as well. (If you don't have cheesecloth, you can use tea infusers or loose tea bags. You could also put the spices directly into the slow cooker, then strain the mixture as you serve.)
  • Cut the piece of peeled ginger in half lengthwise and smash each piece by laying the flat of the knife over it and smacking with the heel of your hand. (At this point, put the slow cooker in the spot where you'd like to serve it, because it will become difficult to move once you've added all of the liquid.) Add the ginger, lemon, orange, salt and apple cider to the slow cooker. Cover, and cook on high for 3 hours.
  • Reduce the heat to warm. Add the rye whiskey and vanilla and stir to combine. You can leave the cider on warm for several hours, allowing guests to serve themselves, adding additional citrus slices and cinnamon sticks to their mugs, as desired.
