8 bone-in skin-on chicken thighs (2 1/2 to 3 lb total)
1 teaspoon lemon pepper
1/2 teaspoon salt
2 teaspoons finely chopped garlic
1 cup Progresso™ chicken broth (from 32-oz carton)
2 teaspoons grated lemon peel and 2 tablespoons lemon juice (from 1 large lemon)
2 tablespoons cold water
2 tablespoons cornstarch
Cooked white rice, if desired

Steps:

  • Spray 3 1/2- to 4-quart slow cooker with cooking spray.
  • In 12-inch nonstick skillet, heat 1 tablespoon of the butter over medium-high heat. Season chicken with 1/2 teaspoon of the lemon pepper and the salt. Place half of the chicken thighs skin-side down in skillet; cook 4 to 5 minutes or until skin is golden brown and chicken releases easily from surface. Turn chicken over; cook 2 minutes. Repeat for remaining chicken.
  • Layer chicken thighs, skin-side up, inside slow cooker; sprinkle with garlic. In 2-cup measuring cup, mix chicken broth, lemon peel, lemon juice and remaining 1/2 teaspoon lemon pepper; pour over chicken thighs. Cover and cook on Low heat setting 3 to 3 1/2 hours or until chicken is tender (at least 165°F).
  • Remove chicken to serving platter; cover and keep warm. In small bowl, mix water and cornstarch; beat with whisk into cooking juices in slow cooker. Cover and cook on High heat setting 20 to 30 minutes or until slightly thickened and bubbly around edges. Stir in remaining 2 tablespoons butter. Serve sauce with chicken and cooked rice.

2 lbs yellow potatoes, (cut into large chunks (about 2-inches))
1/2 medium yellow onion, (cut into chunks)
5 cloves garlic, (minced)
2 1/2 tsp dried oregano
1 tsp dried basil
1 tsp dried rosemary, (crushed)
Salt and freshly ground black pepper
3 lbs. bone-in, skin-on chicken thighs, (trimmed of excess skin)
1 1/2 Tbsp olive oil
1/2 cup chicken broth
3 1/2 Tbsp fresh lemon juice
2 tsp lemon zest, (divided)
3 Tbsp fresh parsley

Steps:

  • Place potatoes and onions in an even layer in a 6-quart slow cooker. Pour in chicken broth. Sprinkle with half the garlic, half the oregano, half the basil and half the rosemary then season with salt and pepper.
  • Heat oil in a large heavy bottomed pot over medium-high heat. Working in two batches, dab skin side of half the chicken thighs dry with paper towels, season with salt and pepper then sear in pot, skin side down, until golden brown, about 4 minutes. Transfer chicken to slow cooker over potato layer. Repeat with remaining thighs.
  • Slowly and evenly pour lemon juice over chicken thighs, then sprinkle in remaining half the garlic, oregano, rosemary and basil over chicken. Sprinkle 1 tsp lemon zest over chicken (reserve remaining 1 tsp in a container in refrigerator until ready to serve).
  • Cover and cook on low heat 5 1/2 - 7 hours. Serve warm spooning some of the slow cooker juices over each serving, sprinkle with fresh parsley and remaining 1 tsp lemon zest.

1 large green bell pepper, cut into strips

3 garlic cloves, crushed
1 (15 ounce) can tomato sauce
1/2 cup chicken broth
1/2 cup pimento stuffed olive
1 teaspoon olive oil
1 tablespoon tomato paste
1/2 teaspoon salt

1 bay leaf
6 chicken legs with thigh, skin and fat removed (about 3 lb.)

Steps:

  • Combine all ingredients except chicken in a 4-1/2 quart crock pot. Mix well.
