1 pound medium red potatoes, quartered
1 cup fresh baby carrots
1 boneless beef chuck roast (3 to 4 pounds)
1/4 cup Dijon mustard
2 teaspoons dried rosemary, crushed
1 teaspoon garlic salt
1/2 teaspoon dried thyme
1/2 teaspoon pepper
1/3 cup chopped onion
1-1/2 cups beef broth
Minced fresh thyme, optional

  • Place potatoes and carrots in a 5-qt. slow cooker. Cut roast in half. 2 Tbsp olive oil, extra virgin
1 3/4 lb beef bottom round roast
salt and pepper
1 1/2 tsp garlic, minced
1 tsp beef stock
1 c water
3 Tbsp honey mustard
1/2 c chopped onions
1 can(s) mushroom pieces (optional)
2 medium potatoes cut into 1" cubes (optional)

Steps:

  • 1. Sprinkle the roast on both sides with salt and pepper and garlic. In a frying pan over medium heat add the olive oil, and sear the roast on all sides.
  • 2. To the slow cooker add the stock, water, honey-mustard and the onions and stir to dissolve the stock and mustard. Move the roast with the pan drippings to the slow cooker, cover and cook on high for 5 hrs or low for 8 hrs.
  • 3. If you want; 1 hr before the end you can add the mushrooms and potatoes.
