SLOW-COOKER HAM AND BLACK-EYED PEA SOUP

Slow-Cooker Ham and Black-Eyed Pea Soup image

This recipe is proof that soup is a perfect food to slow cook. The low and slow cooking softens up the ham hock and infuses the black-eyed peas with loads of flavor, without turning them to mush. And after it's finished its flavoring duties, that ham hock still has more to give your soup. The meat that's clinging to the hock gets chopped into bits and added back in for a toothsome texture and heartiness that'll satisfy the whole family. So next time you need a set-it-and-forget-it family dinner, you know what to do.

You can also do this on the stovetop. Just follow the directions on the back of the lima bean bag and add the seasonings. Slow cooker time is about 7 hours. Add a side salad for a complete meal.

EASY SLOW COOKER HAM

Easy Slow Cooker Ham image

This recipe has become, hands-down, my favorite ham! This has replaced our Christmas Ham and makes the entire house smell amazing! There is nothing like coming home with this ham cooking! Experiment with the amounts of seasonings to your liking. I prefer more nutmeg but some prefer less nutmeg and more maple syrup!

Provided by REINEJESSICA

Categories     Main Dish Recipes     Pork     Ham     Whole

Time 10h15m

Yield 12

Number Of Ingredients 11

1 (6 pound) bone-in country ham
30 whole cloves
3 cups apple cider, or as needed
1 cup brown sugar
1 cup maple syrup
2 tablespoons ground cinnamon
1 tablespoon ground nutmeg
2 teaspoons ground ginger
2 tablespoons ground cloves
1 tablespoon vanilla extract
1 orange's peel

Steps:

  • Press whole cloves into the ham so they are evenly distributed. You may score the ham for easier insertion if you wish. Place the ham in a slow cooker. Pour in apple cider until only about 2 inches of ham is above the surface. Pack the brown sugar on top of the ham, pressing into the cloves. This will get washed away in the next step but any that stays on is a bonus.
  • Pour the maple syrup over the ham. Season the apple cider with cinnamon, nutmeg, ginger, ground cloves and vanilla. Add the orange peel to the pot. Fill the slow cooker as full as you can with apple cider without going over the fill line. Cover and set to Low. Cook for 8 to 10 hours.

  • Trim thick skin (rind), and fat off ham.
  • Spread about 1 1/2 cups of brown sugar on the bottom off the slow cooker crock.
  • Place the ham flat side down into slow cooker. Rub remaining brown sugar onto top of ham.
  • Cover, and cook on Low for 6-8 hours.

Tips:

  • Choose the right ham: Select a fully cooked ham for the best results in the slow cooker.
  • Score the ham: Use a sharp knife to score the surface of the ham in a diamond pattern. This helps the glaze penetrate the meat and creates a crispy crust.
  • Use a flavorful glaze: Choose a glaze that complements the ham's flavor. Popular choices include brown sugar, pineapple, honey, and maple syrup.
  • Cook on low and slow: The ideal temperature for cooking ham in a slow cooker is 275°F (135°C). This low and slow cooking method ensures that the ham stays moist and tender.
  • Check the ham's internal temperature: Use a meat thermometer to check the ham's internal temperature. The ham is ready when it reaches an internal temperature of 140°F (60°C).
  • Let the ham rest: Before carving the ham, let it rest for about 15 minutes. This allows the juices to redistribute throughout the meat, resulting in a more flavorful and tender ham.

Conclusion:

With just a few simple tips, you can create a moist, tender, and flavorful ham that will be a hit at any gathering.
