GINGERBREAD CAKE WITH BROWN SUGAR SAUCE

Gingerbread Cake With Brown Sugar Sauce image

A delightful discovery I made in my Company's Coming 'Lunches' cookbook. The original recipe includes a lemon sauce, but we prefer brown sugar sauce with a generous dollop of whipped cream rather. Or a scoop of vanilla ice cream. Mmm, and the smell... **Update Aug '09: Forget brown sugar sauce! Make a double recipe as a sheet cake (bake for only 20 minutes @ 325) with a double recipe of Recipe#127144! I don't know why I haven't updated this sooner -- I've been making it this way for at least the last 2 years already!!

CRAZY GINGERBREAD (WITH LEMON SAUCE)

Crazy Gingerbread (With Lemon Sauce) image

This is one of my mom's old favorites, and I've made it many times too. It's similar to "Crazy Cake" which is chocolate but follows the same procedure. These recipes were popular in the 70's (in my neighborhood, anyway!). (I'm posting the Lemon Sauce recipe separately to keep those ingredients separate from the cake ingredients.)

Time 40m

Yield 1 cake, 9 serving(s)

Number Of Ingredients 13

1 1/2 cups flour, plus
3 tablespoons flour
3/4 cup sugar
1/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1 teaspoon ginger
1 tablespoon vinegar
6 tablespoons oil

3/4 cup water

Steps:

  • Preheat oven to 375º.
  • In an ungreased 8x8 inch pan, stir together all dry ingredients.
  • With a spoon, make three "wells" in the dry ingredients. In one "well" put the vinegar, in another the oil, and in the third the vanilla.
  • Mix the water and molasses in a separate bowl. Pour over the dry ingredients and mix quickly with a fork. Mix until lumps are gone, but do not beat.
  • Bake at 375º for about 30 minutes.
  • Cut and serve from baking pan, with lemon sauce, applesauce, or whipped cream.
  • See my recipe for "Lemon Sauce" at this site. The contrasting lemon flavor and moistness added by the sauce is what adds the finishing touch to this cake, making it suitable for a company dessert!

Tips:

  • Prep Ingredients Accurately: Precise measurements are crucial in baking. Use digital kitchen scales to ensure accurate ingredient quantities, especially for flour and liquids.
  • Soften Butter Properly: For optimal results, leave the butter out at room temperature for at least 30 minutes before creaming it with sugar. This allows the butter to soften evenly, resulting in a smooth and fluffy batter.
  • Use Fresh Ingredients Whenever Possible: Fresh ingredients impart the best flavor and aroma to your gingerbread cake. Opt for high-quality spices like ground ginger, cinnamon, and nutmeg for a bold and vibrant taste.
  • Do Not Overmix the Batter: Overmixing can result in a tough and dense cake. Mix the ingredients just until they are well combined to maintain a light and fluffy texture.
  • Prevent a Soggy Cake: To avoid a soggy cake, ensure the gingerbread is thoroughly cooled before adding the lemon sauce. This helps prevent the cake from absorbing too much moisture.
