SLOW COOKER FUNERAL POTATOES (HASH BROWN CASSEROLE)
The hash brown casserole (aka funeral potatoes) have always been a food day favorite at my work but the topic came up and I discovered that my husband had never had it. I needed my oven for other things so I came up with this slow cooker version. I also chose to use potato chips over the traditional cereal topping but either will work.

SLOW COOKER FUNERAL POTATOES
This delicious dish known as 'funeral potatoes' is easy to make. I topped mine with more cheese and sliced green onions. A great addition to this would be bacon bits, making it taste almost like a fully loaded baked potato.

Tips:
- Choose the right potatoes: Yukon Gold or Russet potatoes are the best choices for funeral potatoes, as they hold their shape well and have a creamy texture.
- Slice the potatoes evenly: This will help them cook evenly.
- Don't overcrowd the slow cooker: If you have a lot of potatoes, cook them in batches or use a larger slow cooker.
- Add the right amount of liquid: The potatoes should be covered in liquid, but not swimming in it. If you're using a slow cooker, add just enough liquid to cover the potatoes.
- Cook the potatoes on low heat: This will help them cook evenly and prevent them from becoming mushy.
- Don't overcook the potatoes: The potatoes should be cooked until they are tender, but still hold their shape.
- Add the cheese and toppings at the end: This will help the cheese melt and the toppings stay crispy.
Conclusion:
Funeral potatoes are a delicious and easy-to-make dish that is perfect for any occasion. They can be made ahead of time and reheated, making them a great option for busy families. With a few simple tips, you can make sure your funeral potatoes are perfect every time.
