Tips:

  • Choose the right cut of pork: Pork shoulder (also known as pork butt) is the best cut of pork for slow-cooker curry. It's a tough cut of meat that becomes tender and flavorful when cooked slowly.
  • Brown the pork before cooking: Browning the pork before cooking helps to develop flavor and color. To brown the pork, heat a large skillet over medium-high heat. Add the pork and cook, turning occasionally, until browned on all sides.
  • Use a good quality curry paste: The curry paste is what gives the curry its flavor, so it's important to use a good quality paste. Look for a paste that is made with fresh ingredients and has a good balance of flavors.
  • Add vegetables to the curry: Vegetables add flavor, texture, and nutrients to the curry. Good vegetables to add to a slow-cooker curry include onions, carrots, potatoes, and bell peppers.
  • Season the curry to taste: Once the curry is cooked, taste it and adjust the seasonings as needed. You may want to add more curry paste, salt, or pepper.
