Slow cookers are so great for those times when you want a fuss-free dinner. You can literally throw everything in it and leave it all day so you have a lovely wholesome meal waiting for you at dinner time. We left this stew in the slow cooker for 8 hours on a low heat but if you want it ready bit sooner than that, you can turn the heat up to medium and it should be ready in about 4 hours.

EASY SLOW COOKER CHICKEN TACOS
So I heard of people making salsa chicken and I thought I would give it a try but add a few of my own twists to it. My whole family, even the 2-year-old, loved the tacos and we ate the leftovers at our very next meal. After the mixture is cooked, fill flour tortillas with it (hard shells are great, too), add shredded Cheddar cheese on the top, and shredded lettuce.

SLOW COOKER CHICKEN STEW
A savory autumn stew with apple, red potatoes, onion and seasoning. This is a very easy tasty chicken dish I concocted when I was trying to think of a dish like pot roast yet using chicken rather than beef. My husband hates mushrooms, so I tried condensed celery soup, and it works great. This dish is light yet very zesty and full of flavor. You can substitute using chicken thighs, but it will increase calories and fat. I think using biscuit gravy mix rather than onion gravy mix would work (the flavor would go well with chicken), adding richness, although I haven't tried it that way yet, but again, it would add more fat and calories to this dish. Serve with a side of rice or over noodles.

BEEF BRISKET TACOS
Birthday parties back home were big gatherings of cousins, aunts, uncles, grandparents and anyone else we considered family. As soon as guests arrived, hot pans of shredded brisket, or carne deshebrada, appeared, along with frijoles, tostadas, salsas and huge bowls of salad. Brisket was the dish we always counted on because it could be made in the oven or a slow cooker. -Yvette Marquez, Littleton, Colorado Muy Bueno Recipes + Stories

Tips:
- Use a variety of chicken. Boneless, skinless chicken breasts or thighs are both good options for this stew. If you want a more flavorful stew, you can use bone-in, skin-on chicken thighs.
- Don't overcrowd the slow cooker. If you have a small slow cooker, you may need to cook the stew in batches. Overcrowding the slow cooker will prevent the chicken from cooking evenly.
- Cook the stew on low for 6-8 hours, or on high for 3-4 hours. The longer you cook the stew, the more tender the chicken will be. If you are short on time, you can cook the stew on high, but be sure to check it often to prevent it from overcooking.
- Add the vegetables and beans during the last hour of cooking. This will help to prevent them from becoming overcooked.
- Season the stew to taste. You can add additional chili powder, cumin, or salt and pepper to taste.
- Serve the stew with your favorite toppings. Some popular toppings include sour cream, shredded cheese, guacamole, and salsa.
Conclusion:
This slow cooker chicken taco stew is a delicious and easy meal that is perfect for a busy weeknight. It is also a great way to use up leftover chicken. The stew is flavorful and versatile, and it can be served with a variety of toppings. So next time you are looking for a quick and easy meal, give this slow cooker chicken taco stew a try.
