I needed my oven for other things so I came up with this slow cooker version. I also chose to use potato chips over the traditional cereal topping but either will work.

1 bag (32 oz.) frozen diced potatoes
1 (10.5 ounce) can condensed cream of celery soup
1 small onion, finely chopped
2 cups shredded Cheddar cheese, divided
1 cup sour cream
2 tablespoons unsalted butter
1 teaspoon minced garlic
1 teaspoon salt
½ teaspoon ground black pepper
½ cup kettle-cooked potato chips

Steps:

  • Combine frozen potatoes, soup, onion, 1 cup Cheddar cheese, sour cream, butter, garlic, salt, and pepper in a large bowl. Stir until evenly combined and pour into a slow cooker.

1 cup shredded sharp Cheddar cheese (4 oz)
1/2 cup chopped cooked bacon (6 slices)
2 tablespoons thinly sliced green onions
Sour cream, if desired

Steps:

  • Spray 4 1/2- to 5-quart slow cooker with cooking spray.
  • In 10-inch nonstick skillet, cook beef and onions over medium-high heat 7 to 9 minutes, stirring occasionally, until brown; drain. Return beef mixture to skillet, and place over low heat; stir in cream cheese. Cook 2 to 3 minutes, stirring frequently, until cream cheese melts.

1 small onion, diced
3 cloves garlic, finely chopped
2 bags (20 oz each) refrigerated shredded hash brown potatoes
3 cups shredded Cheddar cheese (12 oz)
2 cups sour cream
1 can (10 1/2 oz) condensed cream of mushroom soup
1/4 cup water
1/2 teaspoon pepper
1/4 teaspoon salt

Steps:

  • Spray 5-quart slow cooker with cooking spray.
  • In 8-inch skillet, melt butter over medium heat. Cook onion and garlic in butter, stirring frequently, 2 to 3 minutes or until translucent and soft.
  • In large bowl, stir onion mixture and remaining ingredients until well combined.

"Easiest ever -- open and pour!" Another great recipe from my mother's Rival Crock Pot Recipe Book from the 70's. These recipes seem to be for a 4 quart slow cooker -- you can increase ingredients for a larger one, or reduce them by half for a smaller one. The cooking times are the same.

2 lb frozen hash brown potatoes (partly thawed)
2 can(s) 10 ounce cans cheddar cheese soup
1 can(s) 13 ounce evaporated milk, undiluted
1 can(s) french fried onion rings
to taste salt and pepper

Steps:

  • 1. Grease the Slow cooker with cooking spray or spread with butter
  • 2. Combine partially frozen hash browns, soup, milk, and half the onion rings in the crock pot.
  • 3. Add Salt and pepper to taste
  • 4. Cover and cook on low 8 to 9 hours (or High for 4 hours)
  • 5. Sprinkle remaining onion rings over top before serving.
  • 6. NOTE: If using 2-quart Crock-Pot, reduce this recipe by half. Cooking times are the same. This should fit in 4 quart but can add more ingredients to fit in 6 quart pot

1½ pounds boneless chicken breasts (diced)
1 teaspoon salt (more or less to taste)
½ teaspoon ground black pepper (more or less to taste)

6 strips of bacon (cooked and crumbled)
2 cups shredded cheddar cheese
4 green onions (sliced)
¾-1 cup heavy whipping cream

Steps:

  • Spray slow cooker with non-stick cooking spray.
  • Spread half of the cut potatoes in the bottom of the slow cooker.
  • On top of the potatoes, spread the diced chicken in a single-layer.
  • Sprinkle half of the salt, half of the pepper, half of the garlic powder on top, half of the bacon, half of the cheddar cheese, and half of the green onions on top of the chicken.
  • Place the rest of the potatoes on top of the chicken, and top with remaining salt, pepper, garlic powder, bacon, cheese, and green onions.
  • Pour heavy whipping cream evenly over the casserole.
  • Place the lid on top and cook on low heat for 6-8 hours.
