1 cup milk
1 tablespoon ground mustard
salt and ground black pepper to taste
1 (16 ounce) package maple-flavored sausage
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Spray the crock of a slow cooker with cooking spray. Spread hash browns to cover the bottom of the slow cooker crock.
  • Whisk eggs, milk, mustard, salt, and black pepper together in a bowl.

1 package (30 ounces) frozen shredded hash brown potatoes
1 pound bulk pork sausage, cooked and drained
1 medium onion, chopped
1 can (4 ounces) chopped green chiles
1-1/2 cups shredded cheddar cheese
12 large eggs
1 cup 2% milk
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a greased 5- or 6-qt. slow cooker, layer half of the potatoes, sausage, onion, chiles and cheese. Repeat layers. In a large bowl, whisk the eggs, milk, salt and pepper; pour over top. Cover and cook on low for 7-9 hours or until eggs are set.

6 potatoes, cubed
1 lb breakfast sausage (raw, ham, chorizo, or bacon can be used)
1 dozen egg
8 ounces cheese, shredded
1 head broccoli (other veggies would be fine too) (optional)
1/2 bell pepper, chopped (optional)
1/2 onion, chopped (optional)

Steps:

  • Place 1/2 of the cubed potatoes, onion, pepper, and veggies in the bottom of the crockpot.
  • Add 1/2 of the meat (uncooked, cook bacon first if using).
  • Place rest of potato mixture in cooker, add other 1/2 of meat.
  • Mix eggs and pour on top.
  • Cover eggs completely with cheese.
  • Set on Low for 8 hours.

2 tablespoons canola oil
one 16-ounce package refrigerated diced cooked potato
1 large red onion, thinly sliced
1 green bell pepper, chopped
1/2 teaspoon salt
one 9 . 6-ounce package turkey breakfast sausage patty, thawed and crumbled
12 large eggs
1 cup milk
1 cup shredded monterey jack pepper cheese

Steps:

  • Spray the insert of a 5-quart slow cooker with cooking spray.
  • Heat the oil in a large nonstick skillet over medium-high heat. Add the potatoes, onion, bell pepper and 1/4 teaspoon salt. Reduce the heat to medium and cook, stirring occasionally, until the potatoes begin to brown and the vegetables are tender, about 12 minutes.
  • Scatter the sausage evenly onto the bottom of the slow cooker. Top evenly with the potato mixture. Whisk together the eggs, milk and remaining 1/4 teaspoon salt in a large bowl until blended. Pour in the egg mixture. Sprinkle the cheese evenly over the egg mixture leaving a 1-inch border around the edges to prevent the egg mixture from sticking.
  • Cover and cook until the eggs are set, and a knife inserted in the center comes out clean, 2 1/2-3 hours on low or 2 hours on high.
  • Tip: Turkey breakfast sausage is a great alternative to higher-fat pork sausage and is equally as tasty.
