- Spicy Black Bean Chili: If you crave a bit of heat, add a diced jalapeño pepper or a teaspoon of chili powder to the pot. Adjust the amount of spice according to your preference.

SLOW COOKER SPICY BLACK BEAN AND SWEET POTATO CHILI
This nourishing, smoky vegan chili is perfect for cold weeknights. Mix everything in the slow cooker before the chaos of the day begins, then just toss in some frozen corn a few minutes before you're ready to eat. As with any chili, toppings go far. Feel free to throw on what you have and what sounds good, like tortilla chips, cilantro or vegan cheese. The recipe calls for either coconut oil or vegetable oil. If you'd like a mild coconut flavor - which plays well with the orange juice in the chili - choose unrefined or virgin coconut oil. For a neutral flavor, choose refined coconut oil or any vegetable oil. Use one chipotle chile for a very mild chili, and four if you like yours very spicy. Steps:
- 1. Cook bacon in Dutch oven over medium heat until crisp, about 8 minutes. Transfer bacon to paper towel-lined plate. Cook onions, peppers, and jalapeños in bacon fat until softened, about 8 minutes. Transfer half of sautéed vegetables to medium bowl, wrap with plastic, and reserve in refrigerator. Add chili powder, cumin, and oregano to pot with remaining vegetables and cook until deeply fragrant, about 2 minutes. Add garlic and cook until fragrant, about 30 seconds. Stir in water, broth, 2 teaspoons salt, dried beans, ham, and crisp bacon. Bring to boil and let simmer 15 minutes.
- 2. Transfer bean mixture to slow cooker and arrange piece of aluminum foil on surface of liquid. Cover and cook on low until beans are tender, 7 to 9 hours (or cook on high 4 to 6 hours).
- 3. Remove lid, discard foil, and transfer ham to cutting board. Stir tomatoes into slow cooker, cover, and cook on high until tomatoes soften, about 20 minutes. Meanwhile, transfer canned beans to bowl and mash with potato masher until rough paste forms. Chop (or shred) ham into bite-sized pieces. Stir mashed beans, ham, lime juice, and refrigerated vegetables into slow cooker. Cook, covered, until heated through, about 5 minutes. Season with salt. Serve.
Tips:
- Soak the Black Beans Overnight: Soaking the black beans overnight not only helps to soften them but also reduces their cooking time in the slow cooker. If you're short on time, you can also quick-soak the beans by bringing them to a boil in a large pot, then removing them from the heat and letting them sit, covered, for an hour.
- Use a Variety of Beans: Don't limit yourself to just black beans. Feel free to mix in other types of beans, such as kidney beans, pinto beans, or navy beans. This will add variety to the texture and flavor of your chili.
- Don't Overcook the Vegetables: The vegetables in your chili should be tender but still have a bit of a bite to them. Avoid overcooking them, as this will make them mushy and bland.
- Season to Taste: Be sure to taste your chili before serving and adjust the seasonings as needed. Add more chili powder, cumin, or salt and pepper to taste.
- Serve with Toppings: Chili is the perfect dish for customizing with toppings. Some popular options include shredded cheese, sour cream, diced avocado, chopped cilantro, and crushed tortilla chips.
Conclusion:
Slow-cooker black bean chili is a hearty, flavorful, and easy-to-make meal that's perfect for a busy weeknight. With just a few simple ingredients and a little bit of prep, you can have a delicious and satisfying chili that the whole family will love. So next time you're looking for a quick and easy dinner option, give this slow-cooker black bean chili a try.
