3 pounds boneless skinless chicken thighs
1 large red or green bell pepper, chopped (1 1/2 cups)
1 large onion, chopped (1 cup)
1/2 cup Progresso™ chicken broth (from 32-oz carton)
1/4 cup ketchup
8 hoagie buns (7 to 8 inches), split

Steps:

  • Rub jerk seasoning generously over chicken. Place bell pepper and onion in bottom of 3 1/2- to 4-quart slow cooker. Place chicken over vegetables. Mix broth and ketchup in small bowl; pour over chicken.
  • Cover and cook on low heat setting 6 to 8 hours.

¼ cup tomato sauce
2 cloves garlic, minced
1 small red onion, chopped

3 lbs boneless skinless chicken thighs
1 1/2 cups chopped red bell peppers or 1 1/2 cups green bell peppers
1 large onion, chopped
1/2 cup chicken broth
1/4 cup ketchup
hot sauce (to taste)
salt and pepper (to taste)
8 hoagie rolls

Steps:

  • Generously rub the jerk seasoning over the chicken thighs.

1 rotisserie chicken, skin discarded and meat shredded
1 rotisserie chicken, skin discarded and meat shredded
One 2-foot Italian bread loaf, sliced in half lengthwise
1 stalk celery, thinly sliced
1 small head iceberg lettuce, shredded
Blue Cheese Ranch, recipe follows
1 cup crumbled blue cheese
1/2 cup mayonnaise
1/4 cup sour cream
2 tablespoons minced chives
1 tablespoon vinegar
1 teaspoon onion powder
1 teaspoon garlic powder
Salt and freshly ground black pepper
