BEEF IN BEER IN THE SLOW COOKER

Beef in Beer in the Slow Cooker image

Delicious tender beef cooked in the slow cooker with beer, shallots, bacon, and mushrooms. The Guiness® makes a lovely gravy without tasting overly strong of beer. This is quite a meaty dish so would also be nice with potatoes and carrots added. I serve this with crusty French bread to mop up the juices. Hearty and warming to come home to. Cooks in 5 hours in the slow cooker; however it would not hurt it to be cooked all day.

SLOW COOKER BEER BRAISED BEEF WITH ONIONS RECIPE

Slow Cooker Beer Braised Beef with Onions Recipe image

Provided by ctaubenheim

Number Of Ingredients 13

4 Lbs Boneless Beef Chuck-eye Roast, trimmed & cut into 1 1/2 inch pieces
Salt & Pepper
2 large Onions, sliced thin
1 Cup Water
2 Tbsp Vegetable Oil
1 Tbsp Packed Brown Sugar
1/4 Cup Tomato Paste
3 Garlic Cloves, Minced
3 Sprigs Fresh Thyme
3 Tbsp All Purpose Flour
1 1/2 Cups Belgian Style or Lager Beer
1 Cup Chicken Broth
1/4 Cup Chopped Fresh Parsley

Steps:

  • Season beef with salt and pepper and place in slow cooker. Combine onions, water, oil, sugar, 1/2 tsp salt, and 1/4 tsp pepper in 12 inch nonstick skillet. Bring mixture to boil over medium high heat. Cover and cook until onions are softened and water is nearly evaporated, about 10 minutes. Uncover and continue to cook, stirring often, until onions are soft and dark brown, 8 to 10 minutes longer. Add tomato paste, garlic, and thyme sprigs and cook until fragrant, about 1 minute. Stir in flour and cook for 1 minute. Stir in beer and broth and bring to simmer. Cook until thickened, about 2 minutes. Transfer onion mixture to slow cooker and stir to combine. Cook until beef is tender, 6 to 7 hours on high or 8 to 10 hours on low. Discard thyme sprigs. Skim fat from surface of stew. Stir in parsley and season with salt and pepper to taste. Serve over egg noodles, rice or mashed potatoes.

Tips:

  • Choose the Right Cut of Beef: Chuck roast, brisket, or short ribs are excellent choices for this recipe due to their rich flavor and ability to withstand long cooking times.
  • Sear the Beef Before Braising: Searing the beef in a hot skillet before adding it to the slow cooker creates a flavorful crust and helps lock in the juices.
  • Use a Variety of Onions: Feel free to mix and match different types of onions, such as yellow, white, and red, for a more complex flavor profile.
  • Add Aromatics and Spices: Don't be afraid to experiment with different herbs and spices to enhance the flavor of the beef. Common choices include garlic, thyme, rosemary, and bay leaves.
  • Use a Good Quality Beer: The type of beer you use will significantly impact the flavor of the braised beef. Choose a beer that you enjoy drinking, as its flavors will be imparted to the dish.
  • Cook Low and Slow: The key to tender, fall-apart beef is to cook it low and slow. Aim for a cooking time of at least 8 hours on low or 4 hours on high.
  • Thicken the Sauce: If you desire a thicker sauce, remove the beef and onions from the slow cooker and bring the cooking liquid to a boil. Then, whisk in a cornstarch slurry until the sauce reaches your desired consistency.

Conclusion:

This slow-cooker beer-braised beef with onions is an incredibly flavorful and satisfying dish perfect for a comforting meal. The combination of tender beef, caramelized onions, and rich beer creates a mouthwatering experience that will surely become a favorite. Serve it over mashed potatoes, rice, or noodles, and enjoy a delicious and effortless dinner that's perfect for busy weeknights or special occasions.
