10 red potatoes, cut into cubes
3 tablespoons all-purpose flour
¾ cup real bacon bits
1 small red onion, chopped
1 clove garlic, minced
2 tablespoons chicken bouillon granules
1 tablespoon ranch dressing mix
2 teaspoons dried parsley
1 teaspoon seasoned salt
½ teaspoon ground black pepper
3 cups water
1 cup half-and-half
½ cup shredded Cheddar cheese, or to taste

1 white onion, finely chopped
2 tablespoons butter

1 medium yellow onion
5 cloves garlic
8 cups chicken or vegetable broth
1 (16-ounce) package cream cheese
1 teaspoon salt

1/4 cup shredded cheese

Steps:

  • Take the cream cheese out of the refrigerator so it can come to room temperature. This allows it to blend into the soup better. Prepare the vegetables for the soup. Wash and peel the potatoes. Chop them into about 1" pieces, which makes for a chunkier soup. If you like a creamier soup, chop them smaller. Set aside. Chop the onion into small pieces.
