Yield 6 servings

Number Of Ingredients 7

1 lb. summer squash or zucchini, sliced crosswise 1/4" thick
1/2 head of garlic
Zest of 1 lemon, removed in wide strips
2 sprigs thyme
1/2 cup extra-virgin olive oil
3/4 tsp. kosher salt
1 Tbsp. fresh lemon juice

Steps:

  • Place a rack in middle of oven and preheat to 350°F. Toss summer squash, garlic, lemon zest, thyme, oil, and salt in a shallow 2-qt. baking dish to combine.
  • Turn garlic cut side down, then roast vegetables, tossing 2 or 3 times, until golden brown, very tender, and edges and cut sides are crisp, 1 hour and 40 minutes-1 hour and 50 minutes. Let cool slightly, then add lemon juice and toss to coat.

Tips:

  • Choose the right squash: Look for small, tender summer squash that are free of blemishes. Zucchini and yellow squash are both good choices.
  • Cut the squash into uniform pieces: This will help them cook evenly.
  • Don't overcrowd the slow cooker: The squash should be in a single layer on the bottom of the cooker.
  • Add enough liquid: The squash should be covered with liquid, but not too much. A good rule of thumb is to add about 1 cup of liquid for every 2 pounds of squash.
  • Season the squash well: Salt, pepper, and garlic are all good choices.
  • Cook the squash on low for 6-8 hours: Or until it is tender. You can also cook the squash on high for 3-4 hours, but check it more often to make sure it doesn't overcook.
  • Serve the squash with your favorite toppings: Butter, sour cream, grated cheese, or chopped fresh herbs are all good options.

Conclusion:

Slow-cooked summer squash is a delicious and versatile dish that can be enjoyed as a side dish, main course, or appetizer. It's easy to make and can be tailored to your own taste preferences. With a few simple ingredients and a little time, you can create a delicious and healthy meal that the whole family will enjoy.
