1 package (2 to 3 pounds) corned beef brisket
1 cup Thousand Island dressing
16 slices pumpernickel rye bread, toasted
8 slices (1 ounce each) Swiss cheese

Steps:

  • Place sauerkraut in 3- to 4-quart slow cooker. Place beef brisket on sauerkraut. (If brisket includes packet of spices, sprinkle spices over brisket.)
  • Cover and cook on Low heat setting 9 to 11 hours.
  • Remove beef from cooker; place on cutting board. Cut beef into slices. To serve, spread 1 tablespoon dressing on each toast slice. 1 lb sauerkraut, rinsed and drained
1 pkg 8 oz. cream cheese
2 c shredded swiss cheese,
1 pkg corned beef, (3 ounces or more)chopped or use deli corned beef
3 Tbsp thousand island dressing
snack rye bread or crackers, or whole grain bread

  • 1. Spray liner of crock pot/slow cooker, first and then then combine kraut, cream cheese, shredded swiss cheese, chopped corned beef and Thousand Island dressing in a small 1 1/2 quart size slow cooker/crockpot.
