SLOW-COOKED FISH STEW
I love fish and chowder, so this stew is a favorite of mine. It's made without cream or whole milk for a healthier touch. To add richness and extra flavor, top servings with a little grated cheddar.-Jane McMillan, Dania Beach, Florida

SLOW-COOKER FISH CHOWDER
A great, hearty fish chowder that's lower in fat. Perfect for a winter's day. This recipe is very versatile. I use low-sodium, homemade stock and I find there's enough salt from the bacon that no more is needed. You can change up the seafood, the vegetables, and the seasonings. I find seafood chowder difficult to reheat (a no-no at work!) so I would make this when I have company coming who can finish it in 1 or 2 days.

Tips:
- Choose the Right Fish: Opt for firm-fleshed fish like salmon, cod, halibut, or tilapia. These hold their shape well during cooking and won't become mushy.
- Don't Overcook the Fish: Keep an eye on the cooking time to prevent overcooking. Overcooked fish will become dry and tough.
- Use a Variety of Vegetables: Don't limit yourself to just a few veggies. Incorporate a mix of colorful vegetables like carrots, celery, onions, bell peppers, and tomatoes for a nutritious and flavorful stew.
- Add Herbs and Spices: Enhance the flavor of your stew with a blend of herbs and spices. Common choices include thyme, oregano, basil, rosemary, paprika, and chili powder.
- Don't Forget the Liquid: Use a flavorful liquid like broth, stock, or even coconut milk to create a rich and savory stew. Water can also be used, but it may result in a less flavorful dish.
- Thicken the Stew (Optional): If you prefer a thicker stew, you can add a cornstarch or flour slurry towards the end of cooking. Be sure to mix it well to avoid lumps.
Conclusion:
Slow-cooked fish stew is a delightful dish that combines the goodness of fish and vegetables in a flavorful broth. By following these tips, you can create a delicious and satisfying stew that's perfect for a cozy meal. Experiment with different types of fish, vegetables, herbs, and spices to create your own unique variations. Remember to adjust the cooking time based on the type of fish used, and serve it with a side of crusty bread or rice to soak up all the delicious broth.
