SLOW COOKED MADRAS CHICKEN CURRY (CROCK POT)

Slow Cooked Madras Chicken Curry (Crock Pot) image

I do love my crock pot as it continually provides me with tasty and effortless meals. This began as a recipe found on about.com, but the changes are rather substantial so I feel comfortable calling it my own. There are as many ways to prepare curry as there are chefs who enjoy the spice blend which makes me a little apprehensive about posting this recipe. Your results will vary according to the curry powder and chutney selected so please adjust to your own tastes.

Time 4h55m

Yield 4 serving(s)

Number Of Ingredients 9

2 small onions, finely diced (about 2 cups)
2 garlic cloves, minced (about 1 1/2 tablespoons)
1/2 jalapeno, finely diced (about 1/2 tablespoon)
1 tablespoon gingerroot, minced
1 tablespoon tomato paste
2 tablespoons Madras curry powder
3/4 cup mango chutney
1 1/4 lbs boneless skinless chicken breasts or 1 1/4 lbs boneless skinless chicken thighs
1 granny smith apple, cut into medium to large chunks (I did tenths and halved them)

Steps:

  • Lightly spray the interior of your crock pot with a light coating of cooking spray for easier clean up later.
  • Cover the bottom of pot with the onions, garlic and jalapeños. Top with the chicken breasts. (Please make sure the onions are finely chopped as the desired result is to have them melt into the sauce.).
  • Combine the curry powder, chutney, tomato paste and ginger together and pour over the chicken.
  • Place the apples on top.
  • Cook for 4-5 hours on high until the chicken is cooked and tender but not falling apart. Mix the sauce together so that all elements are blended. If you want a thicker sauce, remove the chicken from the crock pot and stir in a teaspoon or two of cornstarch and cook until the sauce is glossy.

SLOW COOKED HONEY CURRY CHICKEN

Slow Cooked Honey Curry Chicken image

An adaptation of a recipe from "Dinnertime Easy: Slow Cooker Recipes." I love the combination of spicy, sweet and hot that emerges in this dish, though the flavor will vary based on the type of curry used. Part of why I love this one is that the taste is even better the next day, so it's a great option for those of us in smaller households and cook once and plan for leftovers. As presented this is 5 WW points per serving.

Time 4h10m

Yield 4 serving(s)

Number Of Ingredients 10

1 medium onion, halved and sliced thin
1 lb baby carrots
2 tablespoons grainy brown mustard
2 tablespoons Dijon mustard
3 tablespoons honey
2 teaspoons curry powder
1 dash cayenne pepper (optional)
4 (5 ounce) boneless skinless chicken breasts
1 tablespoon water
1 1/2 small red peppers, halved and cut into 1/2 inch thick strips

Steps:

  • Place the sliced onions in a thin layer on the bottom of the slow cooker. Scatter the baby carrots on top.
  • Mix together the mustards, honey, curry powder and cayenne together in a bowl. Brush half of the mixture onto the chicken breasts and place the poultry on top of the onions and carrots. Top with the red peppers.
  • Mix the water into the remaining honey mustard mix. Pour over the peppers.
  • Cook on high for 3 1/2 to 4 hours.

Tips:

  • Choose the right chicken pieces: Boneless, skinless chicken breasts or thighs are best for this recipe, as they cook evenly and quickly. If you're using bone-in chicken, you'll need to increase the cooking time by about 30 minutes.
  • Don't overcrowd the slow cooker: Make sure there is enough space between the chicken pieces so that they can cook evenly. If you overcrowd the slow cooker, the chicken will steam instead of brown.
  • Use a variety of vegetables: This recipe calls for onions, carrots, and bell peppers, but you can also add other vegetables like broccoli, cauliflower, or zucchini. Just make sure to cut the vegetables into bite-sized pieces so that they cook evenly.
  • Add flavor with spices: The spices in this recipe are just a starting point. Feel free to add other spices that you like, such as cumin, coriander, or chili powder.
  • Cook the chicken on low for 6-8 hours: This will allow the chicken to cook slowly and evenly. If you cook the chicken on high, it will be more likely to dry out.
  • Serve the chicken with rice or naan: This dish is traditionally served with rice or naan, but you can also serve it with pasta or potatoes.

Conclusion:

This slow-cooked curry chicken is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The chicken is tender and flavorful, and the sauce is rich and creamy. You can serve this dish with rice, naan, or pasta, and it's sure to be a hit with your family and friends.
