CRANBERRY BARBECUE CHICKEN - CROCK POT

This is a variation of an old favorite, cranberry chicken...adding the barbecue sauce adds a little zest!

Provided by TishT

Categories     Chicken

Time 6h5m

Yield 6-8 serving(s)

Number Of Ingredients 7

3 -4 lbs chicken pieces
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup celery, diced
1/2 cup onion, diced
1 (16 ounce) can whole berry cranberry sauce
1 cup barbecue sauce

Steps:

  • Combine all ingredients in a slow cooker.
  • Cover and bake on high for 4 hours or on low for 6-8 hours.
  • Before serving, you may want to pull the meat out and thicken the sauce with flour or corn starch (optional).

Tips:

  • Use fresh cranberries. Fresh cranberries have a brighter flavor than frozen or dried cranberries.
  • Don't overcook the chicken. Chicken breast is a lean meat, so it can easily become dry if it is overcooked. Cook the chicken until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Use a slow cooker liner. A slow cooker liner makes cleanup a breeze. Simply remove the liner from the slow cooker after cooking, and discard it.
  • Serve the chicken with your favorite sides. Cranberry chicken can be served with mashed potatoes, rice, or noodles. It can also be served with a side of vegetables, such as roasted carrots or Brussels sprouts.

Conclusion:

Slow-cooked cranberry chicken is a delicious and easy-to-make meal. It is perfect for a busy weeknight dinner or a casual weekend lunch. The chicken is moist and flavorful, and the cranberries add a tart and tangy sweetness. This dish is sure to be a hit with the whole family.
