- Heat oil in large skillet over medium heat. Add beef and brown, breaking apart into small crumbles as it cooks, about 10 minutes. Drain any grease.
- Add diced onion and bell pepper to same skillet and cook 2-3 minutes, until soft. Add pre-minced garlic and cook for another 30 seconds or so. Add beef back to the skillet and mix well.
- While the beef is cooking add the remaining ingredients to a small mixing bowl using ½ the water or ½ cup. Whisk together until smooth. Add to the beef and vegetable mix in the skillet.
- Cook over medium low heat for 10-15 minutes, until mixture has thickened to your desire. Use any remaining water as need to your desired consistency.
- Remove from heat and serve over low sodium toasted buns or choice of accompaniment.

- Melt the butter in a large skillet over medium-high heat. Add the onions and peppers and cook, stirring occasionally, until softened and starting to caramelize in some spots, 6 to 7 minutes. Add the garlic and cook, stirring, until fragrant, about 1 minute. Stir in the beef and cook, breaking up the meat with a wooden spoon or spatula, until it is browned, no longer pink in the middle and cooked through, 7 to 8 minutes.
- Stir in the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, red wine vinegar, paprika, cayenne pepper, 1 teaspoon salt and a generous amount of black pepper and simmer, stirring occasionally, until thickened and heated through, 5 to 6 minutes. - Seasoning Mix: Combine all ingredients in a coffee mill or mini chopper and blend well.
- Store in a cool dry place, covered. Use up within 6 months.
- Yield: Enough for 6 Sloppy Joes.
- Sloppy Joes: Heat up the oil in a saute pan on medium-high heat and brown the meat until no longer pink. Pour off grease.
- Add the Sloppy Joe's seasoning mix, can of tomato sauce, and 1/2 cup water. Bring to boil, then reduce heat, cover and simmer 15-20 minutes. Season to taste with salt if desired.
- Serve hot over rolls. The buns can be toasted or untoasted, your choice.

NO-SALT SLOPPY JOES
As far as I can tell, this came from the University of Nebraska, Lincoln. By making your own seasoning mix, you control the sodium, along with the rest(which chili powder,ketchup, etc. you prefer). By using salt-free ketchup, you can eliminate the salt and still serve a tasty Sloppy Joe.
