8 pounds ground beef (extra lean)
1/3 cup flour
2 1/2 cups celery (diced)
2 1/2 cups onion (diced, about 2 medium onions)
1/2 cup mustard (or more to taste)
1/2 cup vinegar
1/2 cup brown sugar (light brown, or dark brown)
28 ounces catsup (3 1/2 cups)
2 cups water
60 Hamburger buns (small ones, but not slider buns)

Steps:

  • In a very large fry pan, brown hamburger meat in three batches. Once the first batch is about half way browned, add 1/3 of the onion, 1/3 of the celery and 1/3 of the flour. Once the meat is browned, move the mixture to a big soup pot and repeat with two more batches.
  • Use an 8 quart soup pot. I have used a 6 quart, it works but a little tight on space.
  • Once all of the ingredients are in the big soup pot, add remainder of the ingredients and simmer for at least 30 minutes. If the mixture seems dry, or needs a little punch of flavor, I add a little bit of your favorite bottled bbq sauce.
  • Adjust seasonings to taste and serve on hamburger buns.

24 sandwich buns, split

Steps:

  • In 4-quart Dutch oven, cook beef and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
  • Mix beef mixture and remaining ingredients except buns in 3 1/2- to 4-quart slow cooker.
  • Cover and cook on Low heat setting 7 to 9 hours.
  • Stir well before serving. To serve, fill each bun with about 1/3 cup beef mixture. Beef mixture will hold on Low heat setting up to 2 hours; stir occasionally.

1 large green pepper, chopped
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cans (8 ounces each) tomato sauce
1 can (6 ounces) tomato paste
2 tablespoons Worcestershire sauce
1 tablespoon sugar
2 teaspoons celery salt or celery seed
2 teaspoons onion salt or onion powder
1 teaspoon paprika
1/4 to 1/2 teaspoon cayenne pepper
3 bay leaves
16 hamburger buns, split

Steps:

I made these for a potluck at work and they were a definite hit! One thing I didn't put in the recipe: instead of using 1 bell pepper, I usually use 1/2 cup of tri-pepper mix.
