GRANDMA'S CUCUMBER AND ONION SALAD

Grandma's Cucumber and Onion Salad image

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

SIMPLE CUCUMBERS AND ONIONS

Simple Cucumbers and Onions image

My mom always had a bowl of this in the fridge during the summer, and now I do too! My mom sliced her cucumbers and onions in cold salt water for a few hours first, but I usually do not. I do not notice difference when they are not soaked. Instead of peeling the cucumbers completely, I leave a few stripes of green to add color to the salad. Note: Cooking time includes time to chill salad before serving.

Time 2h15m

Yield 6-8 serving(s)

Number Of Ingredients 5

2 -3 medium cucumbers, sliced very thin
1 medium onion, cut in half and thinly sliced
1/3 cup vegetable oil
1/3 cup vinegar
1/2 cup sugar

Steps:

  • Combine oil, vinegar, and sugar in a medium to large bowl (big enough to hold all completed salad). Stir until sugar is dissolved (Note: You can heat the dressing to help keep it from separating. It is not necessary, but I do if I have time. If you heat the dressing, be sure to cool it before adding to cucumbers).
  • Add cucumbers and onions to dressing. Toss to coat veggies.
  • Cover and chill at least 2 hours before serving. The longer it chills, the better it gets!

CUCUMBERS AND ONIONS

Cucumbers and Onions image

Sliced cucumbers and onions in a light homemade sweet/tart vinegar dressing. This recipe is easy, tasty and down right yummy. Make early in the day and let marinate in fridge. Really good served with fried chicken, mashed potatoes and creamy gravy. I make them sugar free with splenda.

Provided by Julia Ferguson

Categories     Other Salads

Time 20m

Number Of Ingredients 9

1 cucumber, sliced thin
1 sweet onion, slice thin (i like the texas sweet)
3/4 c sugar, can use splenda instead
1/3 c cidar vinegar (i use white distilled vinegar)
2 Tbsp water
1/2 tsp salt (optional, i don't add it)
pepper, to taste
couple dash(es) celery seed
couple dash(es) dried parsley

Steps:

  • 1. Layer sliced cucumber and onions alternately into bowl, set aside.
  • 2. Mix remaining ingredients together, stir until sugar is dissolved. Pour dressing mixture over cucumber and onion mixture. Cover and refrigerate for a couple of hours to marry flavors.
  • 3. Notes: This recipe can easily be doubled. If my cucumber and onion are large I will double the dressing ingredients. I like the dressing poured over tomato chunks, chopped cucumber chunks, chopped green onions, green and red pepper chunks and sliced celery for another salad variation. Enjoy!

Time 15m

Yield 6 serving(s)

Number Of Ingredients 5

3 -4 medium cucumbers
1 small onion
1 cup white vinegar
1 cup sugar
1 cup water

Steps:

  • Peel and slice the cucumbers, thinly slice the onion and place in a bowl.
  • Then mix vinegar, sugar, and water together and pour over the cucumbers and onions. It tastes the best if it is allowed to sit in the fridge for an hour or two.

Tips:

  • Choose the right cucumbers: For best results, use fresh, firm cucumbers that are not too ripe. Avoid cucumbers that are yellow or have soft spots.
  • Slice the cucumbers and onions thinly: This will help them absorb the vinegar and seasonings more easily.
  • Use a variety of vinegar: You can use white vinegar, apple cider vinegar, or rice vinegar. Each type of vinegar will give the cucumbers a slightly different flavor.
  • Add your favorite seasonings: Some common seasonings for sliced cucumbers and onions include salt, pepper, dill, and garlic powder. You can also add other herbs and spices, such as oregano, basil, or thyme.
  • Let the cucumbers and onions marinate: This will allow the flavors to meld and develop. You can marinate the cucumbers and onions for as little as 30 minutes or for up to overnight.

Conclusion:

Sliced cucumbers and onions are a refreshing and versatile side dish that can be enjoyed in many different ways. They can be served as a simple salad, or they can be used as a topping for burgers, tacos, or sandwiches. They are also a great addition to picnics and potlucks.
