SLAW & BANANAS
Found this recipe written in my mother's old steno pad. She copied this down in the late 50's while visiting family on the farm in Kansas. I can't remember her making it, but I wish she had because it sure tastes great. Throw in a handful of sweetened-dried cranberries for color and texture.

Tips:
- Choose ripe bananas: The riper the bananas, the sweeter and more flavorful your slaw will be.
- Use a variety of cabbage: For a more complex flavor and texture, use a mix of different types of cabbage, such as green cabbage, red cabbage, and Savoy cabbage.
- Add some sweetness: To balance out the acidity of the vinegar, add a touch of sweetness with sugar, honey, or maple syrup.
- Don't overdress the slaw: A little dressing goes a long way. Too much dressing can make the slaw soggy.
- Chill the slaw before serving: This will help the flavors to meld and the slaw to become more crisp.
Conclusion:
Slaw is a versatile dish that can be served as a side dish, a main course, or even a snack. It's a great way to use up leftover vegetables and fruits, and it's also a healthy and delicious way to get your daily dose of vitamins and minerals.
