4 - 5 pounds russet potatoes (washed but NOT peeled. Diced into 1/2 inch(ish) cubes)
1 medium yellow onion (diced)
10 cloves garlic, minced ((about 3 generous tablespoons))
6 - 8 cups chicken stock or broth
16 oz cream cheese (softened)
1 tablespoon seasoned salt
optional garnishes: crumbled bacon (shredded cheese, green onions)

Steps:

  • Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker.
  • Cook on high for 6 hours or low for 10 hours.
  • Add the softened cream cheese and puree soup with an immersion blender until the cheese is incorporated and about half the soup is blended.
  • Stir well, top with your choice of garnishes & enjoy!

8 medium potaoes
1 stick butter, softened
1/2 c all purpose flour
6 c milk, 2%
1 c sour cream
2 c shredded cheddar cheese
1 tsp garlic powder
2 tsp salt
1 tsp black pepper
1 Tbsp worcestershire sauce
1 can(s) cream of onion soup

Steps:

  • 1. Peel, dice, and cook potatoes until soft, drain and set aside.
  • 2. In a large stock pot melt butter, add garlic powder, Worcestershire sauce, salt, and pepper. then slowly add flour, whisk until smooth. Then add milk, slowly, whisking until well blended. Then add cream of onion soup until well blended. Then add your cooked potatoes. Bring to a boil, reduce heat and let simmer for 15 minutes.
  • 3. Add sour cream and cheese, stirring until cheese is completely melted. Let cook 10-15 minutes more, stirring occasionally. Serve with optional bacon bits and chives.
