ROASTED VEGETABLE LASAGNA

Roasted Vegetable Lasagna image

Use a sharp, potent cheese in this dish for the most flavor. Parmesan, Romano, Asiago or sharp cheddar will all work as well in the filling. Stick to mozzarella for the top, however, as it melts and browns the best. For extra browning, place the lasagna under the broiler for a minute or two at the end of cooking.

Tips:

  • Choose the right vegetables: Use a variety of colorful vegetables for a more nutritious and visually appealing lasagna. Some good options include zucchini, eggplant, bell peppers, mushrooms, and spinach.
  • Roast the vegetables properly: Roasting brings out the natural sweetness and flavor of the vegetables. Make sure to roast them until they are tender but still have a slight crunch.
  • Use a light sauce: A heavy sauce can overwhelm the delicate flavors of the roasted vegetables. Use a simple tomato sauce or a light Alfredo sauce.
  • Don't overcook the lasagna: Lasagna is best when it is cooked through but still has a slightly al dente texture. Overcooking can make the lasagna dry and tough.
  • Let the lasagna rest before serving: This allows the flavors to meld and the lasagna to set. It also makes it easier to slice and serve.

Conclusion:

ThisSkinny Roasted Vegetable Lasagna is a delicious and healthy twist on a classic dish. It is packed with vegetables, making it a great way to get your daily dose of nutrients. The lasagna is also relatively low in calories and fat, making it a good option for those who are watching their weight.
