Tips:

  • For a flaky crust, use cold butter and work it into the flour mixture quickly. Avoid overmixing the dough, as this will make it tough.
  • To prevent the crust from shrinking, chill it for at least 30 minutes before baking.
  • For a smooth and creamy filling, make sure the cream cheese is softened to room temperature before mixing.
  • Use fresh key limes for the best flavor. If you can't find key limes, you can substitute regular limes.
  • To prevent the filling from curdling, temper the eggs by slowly whisking them into the hot lime juice mixture.
  • Bake the bars until the center is just set. Overbaking will make the bars dry and crumbly.
  • Let the bars cool completely before cutting and serving. This will help them hold their shape.

Conclusion:

These Skinny Key Lime Pie Bars are a delicious and refreshing treat that are perfect for any occasion. They're easy to make and can be customized to your liking. With a flaky crust, creamy filling, and tangy key lime flavor, these bars are sure to be a hit with everyone who tries them.
