1/4 c cold water
1 Tbsp unflavored gelatin
1/3 c splenda
2 large eggs
2 tsp vanilla extract
1/4 tsp rum extract
1 tsp cinnamon
1/2 tsp nutmeg
3/4 c boiling water
2 c ice water
1 c powdered fat free milk
reduced fat whip cream if desired

Steps:

  • 1. In a blender combine the cold water and gelatin. Let it sit for a couple of minutes. Add powdered milk, Splenda, eggs, vanilla, Rum extract, cinnamon and nutmeg.
  • 2. Blend on low for 30 seconds. Add the boiling water. Blend for another 30 seconds on low until gelatin is dissolved. Add ice water and blend on high for 2 minutes.
  • 3. Sprinkle cinnamon on top and a reduced fat whip cream on each serving.

1/2 gal milk, 1%, 2%, or skim, your choice, can also include some ff half & half
1 pt eggbeaters or other brand egg substitute
2 pkg small size sugar free vanilla or french vanilla instant pudding mix
1 tsp nutmeg, more or less to taste
1 tsp rum extract, optional

  • 1. Put all ingredients in blender and mix until smooth and creamy. If you prefer your eggnog a little sweeter, you may add some additional sweetener but this has always been sweet enough for me.
