Eggnog is a Christmas favorite of mine. But, with so many calories, I do try to limit my consumption. After trying this recipe I can enjoy it even more! This eggnog was really yummy ... didn't miss the calories at all.

EGGNOG --QUICK AND EASY
This is so easy, and so good, it disappears in a hurry. We use either Turkey Hill Egg Nog (in dairy case), or Borden's Egg Nog (not refrigerated). We attend a tree-trimming party every year, and everyone waits for the egg nog, brought in plastic gallon jars but served from a cut glass pitcher. A nice touch is to provide a nutmeg grater and whole nutmegs, for each to fix their own. NO RAW EGGS !! It is not necessary to use the highest quality alcohol.

SKINNY EGGNOG - QUICK AND EASY
My very favorite holiday treat is eggnog, which is probably the most fat and calorie laden of all. I cannot resist it, but can't have the sugar and fat, so I developed this skinny version and try to keep some on hand during the season. Not only is it yummy, it keeps me from being tempted by the abundance of sugary sweets this...

Steps:
- 1. Put all ingredients in blender and mix until smooth and creamy. If you prefer your eggnog a little sweeter, you may add some additional sweetener but this has always been sweet enough for me. Use the rum extract if you like the flavor of rum, I usually skip it. Not as skinny, but you can add real rum if you like!
- 2. Please note: Eggbeaters are double pasteurized and safe to drink. They are not raw eggs.
- 3. Please also note: Nutmeg is a strong spice and will become stronger as it sits. Better to add more later if needed. I love it and start with a teaspoon, taste the next morning and adjust if needed. My mom starts with a half teaspoon. If you want to drink some right away, add a little extra to your glass instead of the entire batch. If you prefer boiled custard to eggnog, omit the nutmeg altogether.

Tips:
- Use low-fat milk and Greek yogurt: This will help to reduce the overall fat and calorie content of your eggnog without sacrificing flavor.
- Sweeten with a natural sweetener: Use a natural sweetener like honey or maple syrup instead of refined sugar. This will give your eggnog a healthier sweetness.
- Add some spices: Spices like nutmeg, cinnamon, and ginger can help to give your eggnog a festive flavor.
- Don't overbeat the egg whites: Overbeating the egg whites can make your eggnog too thick and fluffy. Beat them just until they are stiff but still glossy.
- Chill your eggnog before serving: This will help to make it extra refreshing.
Conclusion:
This skinny eggnog recipe is a delicious and healthy way to enjoy the holiday season. It's made with low-fat milk, Greek yogurt, and natural sweeteners, so it's lower in fat and calories than traditional eggnog. Plus, it's quick and easy to make, so you can enjoy it any time you want. So next time you're looking for a festive drink to enjoy, give this skinny eggnog recipe a try.
